Pumpkin Tiramisu

Ingredients

  1. One 14-ounce can pumpkin puree
  2. One 8-ounce block cream cheese, at room temperature
  3. 3/4 cup packed brown sugar
  4. 1 teaspoon pumpkin pie spice
  5. 1 1/2 cups heavy cream
  6. 1/4 cup granulated sugar
  7. 1 teaspoon vanilla extract
  8. 1 cup orange spice tea, brewed with one tea bag and cooled
  9. 1/2 cup orange juice
  10. 3 tablespoons spiced rum, optional
  11. 24 ladyfingers

Instructions

  1. In a medium mixing bowl, beat together the pumpkin puree, cream cheese, brown sugar and pumpkin pie spice. In a separate bowl, beat the heavy cream with the granulated sugar and vanilla to medium peaks. Fold three-quarters of the whipped cream into the pumpkin mixture.
  2. To assemble: In a small bowl, combine the tea with the orange juice and spiced rum if using. Slice the ladyfingers in half. Dip 2 ladyfingers halves into the tea mixture and place in a single layer on the bottom of a dessert glass. Top with about 1/4 cup of the pumpkin mixture. Repeat with another layer of soaked ladyfingers and another layer of the pumpkin mixture. Top with a dollop of whipped cream. Repeat with the remaining glasses and ingredients. Place in the refrigerator until ready to serve. Just be for you serve, garnish each tiramisu with 2 ladyfinger halves.

It was a big hit for Christmas Eve dinner. Not too sweet and very tasty. I made it in a baking dish instead of individual servings.

I made this for Thanksgiving. It was really easy to put together and looked beautiful and fancy. One of the tasters declared it “the best dessert I’ve ever had”. And she knows desserts! It’s true, the kids didn’t dig the rum, but it could be left out for kids. It was totally delicious. I ate 3 that night. I’m rating it excellent on account of the ease of preparation for the product you get, and beauty in presentation, and taste.

This is a pleasant dessert that adults will probably like more than children as my daughter states. This can be made the night before for time-management convenience. I made it in an 8 1/2″ by 8 1/2″ glass baking dish rather than individual servings. 9X9 will work as well. My whole family liked this dessert, except my daughter.
