Ingredients
- 1 cup dried pitted dates, 4-ounces, chopped
- 1 cup water
- 1 tablespoon fresh lemon juice
- 2 tablespoons honey or agave syrup
- 2 tablespoons reduced-fat or no-stir natural chunky peanut butter
- 2 tablespoons unsweetened cocoa powder
- 1 tablespoon unsalted butter
- 1/4 teaspoon kosher salt
- 8 full sheets whole wheat graham crackers, finely ground, about 1 1/4 cups
- 1/2 cup old-fashioned rolled oats, not instant
- Cooking spray
- For coating: unsweetened coconut flakes, crushed graham crackers, finely chopped peanuts, low-fat granola, about 1/2 cup of each, optional
Instructions
- 1. Combine the dates, water, and lemon juice in a medium saucepan. Simmer over medium heat breaking up any large pieces of dates with a spoon, until the mixture resembles a thick paste, 15 to 20 minutes. Stir in the honey, peanut butter, cocoa powder, butter and salt until evenly combined. Stir in the graham crackers and oats. Remove from heat.
- 2. Lightly mist a baking sheet with cooking spray. Drop level tablespoons of the cookie mixture onto the prepared pan. Refrigerate until just chilled and set, about 20 minutes.
- 3. Put desired optional toppings in small bowls. Roll each cookie in desired topping and flatten slightly into a plump disk. Cover and refrigerate until firm. Serve chilled.

These were tasty, although it took longer for the dates to cook down than the recipe said. They were very tasty, but they are more like peanut butter chewy truffles than no bake cookies.
Great homemade alternative to energy bars! I used All-Bran in place of the whole wheat graham crackers and they still tasted a little bit like no-bake cookies. The dates make them very similar in taste and texture to Larabars; I did cook the dates down for a little over 30 minutes so they blended really well with the other ingredients. Easy to make as well, I didn’t even measure, just threw everything together.
Ingenious recipe. Unfortunately, we didn’t have any whole wheat graham crackers, so I just added extra oats and 1/2 cup of walnuts. We are on a sugar fast, so it was okay, but doesn’t top no-bake peanut butter chocolate cookies, but is very much alike.
I am a huge fan of Medjool dates which I keep on hand when available. Ingenious to make a date paste as base. Almond or cashew butter can be easily substituted for peanut butter. I sprinkled red and green jimmies amid the medium shred coconut and sparkle white sugar amid chopped raw cashews for a festive touch – using very little, mainly for eye appeal. The truffles have multiple layers of flavor and great appeal as a healthy option. Thank you, creators!
I really liked these cookies. I took them to a party and everyone raved about them. I used regular peanut butter instead of natural, and chocolate graham crackers instead of whole wheat. So probably it was not as healthy, but very chocolatey and delicious.

Very simple, healthy, and delicious. While it won’t fit everyone’s taste they are absolutely delicious. The date flavor comes through a little bit but it is complemented well with the chocolate. If you’re the type that puts a ton of sugar into everything to compensate for the lack of flavor you may not like this recipe. If you’re looking for a guilt-free delicious treat, give this a try.
