Ingredients

  1. Nonstick cooking spray, for the baking pan
  2. 2 ounces unsweetened chocolate, chopped
  3. 1 cup sugar
  4. 1 stick (8 tablespoons) unsalted butter, at room temperature
  5. 2 large eggs
  6. 1 cup all-purpose flour (see Cook’s Note)
  7. 1/2 teaspoon fine salt
  8. 1/4 teaspoon baking powder
  9. 1/2 cup milk
  10. 2 tablespoons brewed coffee, such as Green Mountain Coffee Roasters® Breakfast Blend Coffee

Instructions

  1. Preheat the oven to 350 degrees F. Spray an 8-inch square baking pan with cooking spray.
  2. Microwave the chocolate in a small microwave-safe bowl in 30-second intervals, stirring in between each, until fully melted, 1 to 2 minutes. Set aside.
  3. Beat the sugar, butter and eggs in a stand mixer fitted with the paddle attachment on medium-high speed until pale and fluffy, about 2 minutes. Whisk together the flour, salt and baking powder in a medium bowl. On low speed, slowly add the flour mixture to the butter mixture and mix until combined. Slowly add the melted chocolate, milk and coffee and mix until fully incorporated. Pour into the prepared baking pan and smooth the top with a rubber spatula.
  4. Bake until a toothpick comes out clean, about 30 minutes. Let cool completely in the pan, then cut into 16 squares.

Fantastic!!! These brownies turned out to be more like a “cake-brownie”, but the most delicious!! Don’t forget the coffee; it makes the difference! I also put 1/2 tsp of cinnamon in the batter.
Then iced them with home made caramel icing (more of a drizzle. These are scrumptious!! SO MOIST! I also toasted the pecans first.
