Mixed Fruit Buckle

Ingredients

  1. 2 lemons, juiced
  2. 1/4 cup sugar
  3. 4 cups peeled and cut peaches*
  4. 2 cups cleaned blueberries
  5. 2 tablespoons cornstarch
  6. 1/4 cup water
  7. 1/2 teaspoon ground cinnamon
  8. 1/4 teaspoon ground star anise
  9. 1/4 teaspoon ground allspice
  10. 1/4 teaspoon ground ginger
  11. 4 ounces unsalted butter, melted
  12. 3/4 cup all-purpose flour
  13. 2 teaspoons baking powder
  14. 1 cup sugar
  15. 3/4 cup whole milk
  16. 1 (13 1/2 by 8-inch) oval baking dish

Instructions

  1. Preheat oven to 350 degrees F.
  2. Pour lemon juice and sugar over fruit. Mix cornstarch and water and add to fruit. Mix dry spices and add to fruit and stir entire mixture and set aside.
  3. Melt butter in small saucepan. Mix flour, baking powder, and sugar; slowly add milk to prevent lumping. Fold this mixture into melted butter, but do not whisk. Spoon fruit on top, gently pouring in liquid. Do not mix, batter will rise to the top during baking. Bake for 30 to 35 minutes.
  4. Serve hot, warm, or at room temperature with whipped cream, creme fraiche or ice cream.

Not runny but I live at 7000 ft elevation and always add 2 Tbsp extra flour and bake a little longer. I also use buttermilk instead of whole milk.

One of my favorites even after all these years.

This fruit combo is wonderful but I have done a triple berry (rasp, black berry, strawberry) which is always a hit. Single fruit is good too and the star anise kicks it over the top.

It’s easy to take out for dinner with friends. I mix up the fruit, spices, and cornstarch in a zip top bag. Then the dry ingredients in another bag. Measure buttermilk and melted butter in a container. I put it all in my casserole dish. When I get to their house, I mix it all together and bake. The fragrance while it’s baking makes everyone hungry!

Mine turned out runny also. I would use more flour if I try this again.

Really, really good. I think it’s the star anise that makes it. Served with whipped cream and everyone asked for the recipe. (Not at all runny.)

This recipe is great for any occasion.
Just enough sweetness and good texture. It is not too runny. I let it sit in the oven a little after the 35 min baking time. It was just right and my teenage daughter liked it!

You might like this. Very runny, even after refrigerating overnight. Not sure if this is what the recipe intended, but I expected a different consistency.

This recipe is a great one and is quick. I use splenda instead of the sugar. Sometimes I add different berries for a change.
