Marinated Fresh Berries

Ingredients

  1. 2 tablespoons sugar
  2. Grated zest 1 lemon
  3. Grated zest 1 lime
  4. 1 cup water
  5. 1 tablespoon freshly squeezed lemon juice
  6. 1 tablespoon freshly squeezed lime juice
  7. 1/4 teaspoon pure vanilla extract
  8. 1/2 pint raspberries, rinsed
  9. 1/2 pint blueberries, rinsed
  10. 1/2 pint strawberries, rinsed, tops trimmed, halved or quartered, if large
  11. 1 pint vanilla frozen yogurt

Instructions

  1. In a small saucepan, combine the sugar, citrus zests, and water. Bring to a simmer and cook until the sugar has dissolved. Remove from the heat and add the citrus juices and vanilla. Combine the berries in a bowl. Pour the warm syrup over the berries and marinate at room temperature for 30 minutes. Serve marinated berries over a scoop of vanilla frozen yogurt.

I served this to my two valentines (hubby and son) on Valentines Day. It was great. I used only strawberries and blackberries. After the mixture cooled, I put french vanilla ice cream in parfait glasses, spooned in the fruit marinate (syrup only!) and topped with more ice cream, then put in freezer. At serving time, I ladled the berries AND syrup over the ice cream and topped with fresh whipped cream. WOW! Who said valentines were just for girls???

this is a nice dessert morning, evening or night. I add blackberries and instead of frozen yogurt i use vanilla ice cream

What a wonderful recipe. Fresh, healthy, colorful and let me not forget….good for you! The berries soak up the fresh juices and will melt in your mouth. Excellent dessert anytime of the year.
