Ingredients

  1. 2 ripe mangoes, peeled and chopped
  2. Dark rum (or lime juice) to taste
  3. Superfine sugar or exotic honey ((Leatherwood honey from Tasmania) – to taste
  4. 4 chilled kiwis, peeled and thinly sliced
  5. Fresh mint leaves for garnish

Instructions

  1. Puree mango through a food mill; season to taste with lime juice, sugar or honey. Spread puree on bottom of a chilled dessert plate and center kiwi slices in the middle; garnish with mint.
