Ingredients
- 5 cups whole milk
- 1 cup Arborio rice
- 1/2 cup sugar
- 1 vanilla bean, seeds scraped
- 1/2 teaspoon ground allspice
- 1/4 teaspoon salt
- 2 tablespoons butter
- 1/4 cup brown sugar
- 2 ripe but firm medium bananas, sliced
Instructions
- Into a large saucepan, mix together milk, rice, sugar, vanilla bean and seeds, allspice and salt over medium-high heat. Let simmer for 45 minutes, stirring frequently and being careful not to scorch the milk. Once rice is tender and pudding has thickened turn off heat and remove the vanilla bean.
- In a heavy skillet, melt butter and add brown sugar over low heat. Stir to melt the sugar. Add sliced bananas and continue to saute until they are soft and covered with the sugar and butter mixture.
- Spoon pudding to serving bowls and top with the warm banana topping.

Arborio rice is a short grain rice and tends to be starchy and sticky, what you want in rice for pudding. Really any short grain will do, medium will work if that is what you have at hand. Just cook it slower and longer to get the starch out so it will be creamy. Forget using long grain though.

I tried this recipe yesterday mainly because I wanted to use up some milk before it spoiled. I had to make (2 substitutions: medium grain rice & 1 tsp. vanilla extract. This was my first time making rice pudding and my family & I really enjoyed it. It does thicken as it cools. Give it a try.
@ suedino…you substituted all of the key ingredients, and thus, lost the essence of this wonderful recipe..It irritates me when recipes are substituted to the point that they’re unrecognizable!!!! You just made generic rice pudding…
i never made rice pudding before afraid of the outcome. Still with 5 cups of milk the rice was not cooked well. I have to keep on trying, i will get it right, i did follow the recipe exactly as it says. I had to keep on adding milk i wonder where i failed. The heat was from low to medium.

The recipe did not turn out well at all. I dont know what happened but I threw it out. The bananas did turn out with a good flavor though.
I did not use the salt, vanilla or the all spice. I used one cinnamon stick and it turned out delicious. My husband and children said it was the best that I have ever made. This is a keeper and so easy to make.
I can always count on the Neely’s to give great desserts! It takes me back to when my grandma used to make rice pudding….but sorry Granny, Gina’s is better. DON’T MISS TRYING THIS RECIPE!!! I wouldn’t change a thing!
