Ingredients
- 1 cup whole milk
- 1 pint green mint chocolate chip ice cream
- 1 teaspoon pure mint extract
- 3 tablespoons dark rum
- Mint sprigs, for garnish
Instructions
- Put the milk, ice cream, mint extract and rum into a blender. Blend on high until smooth, about 15 seconds. Pour into 2 chilled glasses and garnish with a sprig of mint.

This is a wonderful drink, it’s just the right amount of mint (if you like mint); however, i could’ve used a little more alcohol:) This was great, any more recipes like this?
… if you include the mint extract. We bought two pints of ice cream and made two batches. We followed the recipe for the first batch and the mint made it far too strong. We left it out for the second batch and it was perfect, the rum added a nice taste. My only other complaint is that the blender dices the chocolate so much that it all just falls to the bottom of the glass. Overall, the modified recipe was just perfect for today’s hot summer day.
We also had this drink with the St. Paddy Days dinner, minus the rum for the young ones.

I would not have expected someone who doesn’t like mint ice cream (me) to like this drink. But I did ! And more importantly, so did my guests. This one is a keeper, St. Patrick’s Day or otherwise.
