I have made these cookies for my family for about 30 years now. My son (who is now 36 years old) gets so excited when I make these; he always enjoys them with a tall glass of milk. I find that I have to be careful when melting the butterscotch because it seems to scorch easily, so take care — this is an essential ingredient! Also, these are best enjoyed in the winter because they seem to melt and not taste as great in the warmer weather.

Ingredients
- 2 cups butterscotch chips (12 ounces), melted
- 2 tablespoons peanut butter, plain or crunchy
- 6 ounces Chinese or chow mein noodles
- 6 ounces cocktail peanuts
Instructions
- Melt the butterscotch chips in a double boiler over simmering water.
- In a medium bowl, combine the melted butterscotch and peanut butter. Add noodles and peanuts and mix well. Drop the batter by the heaped tablespoon onto waxed paper and refrigerate until cool and set, about 20 minutes.

My husband’s favorite treat! I do skip the double boiler and melt the chips and peanut butter in a large bowl in the microwave.
Tip: Use store-brand chips. Nestles is often difficult to melt.
These are always in high demand with my entire family. I do make these to suit my moms taste as she prefers cashews instead of peanuts. I also delete the peanut butter. There is always a battle as to how many each family member gets to carry home, so I normally triple/quadruple the recipe.

Good foundation recipe. chips come in an 11oz bag, not 12. 11 ozs is more than enough chips for this recipe. I doubled the recipe and used semi-sweet and butterscotch chips (22 oz total). I used the microwave to melt chips, checked every minute. I added noodles because there was too much chocolate. You can safely use 8oz of each the peanuts and chow mein noodles (or 16oz of cereal). Or if you prefer more chocolate in your stacks, use ratios as is. I added 4T crunchy peanut butter to the melted chips.
