Grilled Summer Fruit

Ingredients

  1. Nonstick cooking spray
  2. 3 firm but ripe nectarines, halved, pitted
  3. 3 firm but ripe purple/black plums, halved, pitted
  4. 3 firm but ripe red plums, halved, pitted
  5. 6 metal skewers or thick wooden skewers soaked in water 30 minutes
  6. 3 tablespoons sugar

Instructions

  1. Spray the grill rack with nonstick spray and prepare the barbecue (medium-high heat). Thread 1 piece of each fruit on each of 6 skewers so that the cut sides line up and lay flat. Sprinkle the sugar over the cut sides of the fruit. Let stand until the sugar dissolves, about 10 minutes.
  2. Place the fruit skewers on the grill cut side down. Grill the fruit until it is heated through and caramelized, about 5 minutes. Transfer 1 fruit skewer to each plate and serve.

peaches and nectarines turned out great, the plums were a bit mushy and I won’t use those again. it may have been because they were so much smaller than the other fruit I used. Tasty and simple!

My daughter and I grilled peaches we had picked at the orchard. This is a delightful dessert and goes perfectly with the menu. My daughter asked me to help her with the entire menu. She was thrilled with the peaches adn had a great time earning to cook! This makes a wonderful dessert – far better than a heavy dessert = great for a summer evening!
