Grilled Peaches with Amaretti

Ingredients

  1. 8 ripe peaches, cut in 1/2 and pitted
  2. 1/4 cup vanilla sugar, recipe follows
  3. 1/4 cup good dark rum (recommended: Mount Gay)
  4. 1/4 cup good almond liqueur (recommended: Amaretto Di Savonna)
  5. 8 amaretti cookies, crumbled
  6. Creme fraiche or vanilla ice cream to serve, optional

Instructions

  1. Preheat the oven to 375 degrees F.
  2. Heat a grill with a single layer of charcoal. When the coals are hot, brush the grill with a little oil to make sure the peaches don’t stick. Place the peaches, cut side down, on the grill and cook for a few minutes, until they’re slightly charred.
  3. Place the peaches in an oven-proof dish, sprinkle each half with a little vanilla sugar. Combine the rum and amaretto and drizzle 1/2 of it on the peaches. Bake the peaches for about 10 minutes, until they’re very tender. Serve hot, at room temperature, or cold with crumbled amaretti cookies on top or with the cookies on the side. I like to serve them with a dollop of creme fraiche or vanilla ice cream.

  5. Vanilla Sugar:
  6. Find a jar tall enough to hold 2 vanilla beans. Fill the bottle with sugar and cover tightly. Store on a pantry shelf. After about 3 months you will have a wonderful ingredient for cooking and baking. Keep adding vanilla beans and sugar to the jar and you will have it for years.

I made these tonight and they were tasty. The peaches never really became too soft. I baked them in my small convection oven and the liquor flamed after about one minute in the oven! I didn’t expect that. I served these peaches with some marscapone cream mixed with amaretto and it was a nice combination.

My peaches were a little hard and never soften. I used rum and whiskey with vanilla and almond flavoring. I did sprinkle sugar. Good taste. I’ll try again in a few days when my peaches ripen. I’m sure it will be great. I love the ice cream on top. WOW!!

The idea is great but I think next time I’ll just bake the peaches cause the combo of grilling and baking made for very mushy peaches. And to be honest the grilling added nothing to the flavor. But the amaretti and alcohol on top made the peaches taste wonderful–it’s just the texture that I have a problem.

I made this dessert for company. What I liked about it was that I grilled the peaches and prepared them to be baked ahead of time. I also pre-crumbled the cookies and everything was ready to go.
I got wonderful compliments from my guests who are “foodies”. I also wondered what to do with the other half of the amaretto/rum mixutre, but I remembered seeing Ina drizzling it over the peaches once they were baked. I didn’t do that because I felt they had enough liquor already, so I tossed the rest. I’d make these again! A highly recommended recipe.

We cooked our peaches fully on the grill turning them over once. After pulling them off the grill, we drizzled them with amaretto and added a dollop of mascarpone cream and topped them with crushed biscotti cookies. I love that I can do all of this outdoors and not have to heat my house with the oven.

I left out the Almond liqueur on the ones I ate, but left it for the other people at my house. (I don’t care for that strong strong flavor) I think my peaches may have been too ripe as they got a little mushy when pulling apart, but it was soo good. I also topped them with some crumbles toasted almond slices along with the amaretti cookies. I loved them. Everyone else did, as well, so I decided next time I will eat mine with the almond liqueur. My husband has never had grilled fruit of any kind so he was skeptical, but the next morning he ate 4 for breakfast. Thanks

This peach dessert is so wonderful that my husband eats it and he doesn’t like peaches! I also make a sweetened Marscapone cheese topping then crush amaretti cookies on top for some crunch! It’s excellent and so easy!

Per the recipe, drizzle half of the alcohol concotion on the peaches before baking. There was no mention of what to do with the other half, so I opted to imbibe the rest while waiting for the peaches to bake! Great flavor!
