Ingredients
- 1/4 cup freshly-squeezed orange juice
- 1 teaspoon seasoned rice vinegar
- 1 teaspoon granulated sugar
- 2 cups peeled and diced cucumber
- 1 cup blueberries
- 1 cup diced strawberries
- 1 large Fuji apple, cored and chopped
- Fresh mint, for serving, optional
Instructions
- In a small bowl, combine orange juice, vinegar, and sugar. Stir until blended and set aside.
- Place cucumber, blueberries, strawberries, and apple in a large bowl. Top with the orange juice mixture and stir gently to coat.
- Cover and refrigerate for at least 1 hour (overnight is best). Stir gently just before serving. Garnish with mint, if using. Enjoy!!!

Made this Christmas morning, loved by all including foodies!
This is now my go-to recipe for family gatherings and potlucks- I’ve had nothing but rave reviews! The cucumbers seem like a really strange addition to a fruit salad, but they do create a nice contrast with the sweetness of the fruits. The vinegar also gives it a nice tang (I used apple cider vinegar instead of rice vinegar since that’s what I had on hand.

The cumcumber and rice vinegar make it something extra special and different! Yummy!
Very yummy. Had to use frozen berry mix & other fruit I had around, as well as used honey instead of OJ – My husband, who HATES frozen fruit loved this. I did add extra rice vinegar, we like the little tang. Will use again, & would be great for a holiday dish.
Very good fruit salad! The cucumbers work well with the other fruits.
This is just the best fruit salad and the cucumbers are such a great surprise. I have made this for everyone I work with and I shared it with my four daughters. Out standing!!!
