Ingredients

  1. 2 cups flour
  2. 1 teaspoon baking soda
  3. 1/2 teaspoon salt
  4. 2 teaspoons ground ginger
  5. 1 teaspoon cinnamon
  6. 1/2 teaspoon nutmeg
  7. 1/2 teaspoon allspice
  8. 1/2 teaspoon ground black pepper
  9. 5 tablespoons unsalted butter, melted
  10. 1 cup molasses
  11. 1/2 cup hot tap water
  12. 2 eggs

Instructions

  1. Preheat oven to 350 degrees. Grease a 9 inch square baking pan.
  2. In a bowl stir together flour, baking soda, salt, ginger, cinnamon, nutmeg, allspice and pepper. In a large bowl mix together the melted butter and molasses. Stir in the water until well mixed. Add the eggs and mix to combine. Add the dry ingredients and mix until just combined. Pour into greased baking pan and bake for 30 – 40 minutes or until a toothpick inserted in the center comes out clean. Serve warm with whipped cream, ice cream or applesauce

yes, this does have a bite to it because it is a true old fashioned gingerbread recipe. It is more of a European recipe rather than a sticky sweet American recipe. most of today’s gingerbread recipes are not properly balanced spice-wise or are way too sweet and have only one flavor note. once this sits for a day, the spices blend beautifully.

This spicy cake is what gingerbread is supposed to taste like. It is not cloyingly sweet. A dollop of whipped cream (please, no Cool Whip) sets off the spices perfectly.

This recipe was too spicy – the molasses was overwhelming, and the other spices gave it too much of a bite. I threw the stuff out.

The spices were very overwhelming in this recipe. While the recipe is much like traditional gingerbread they have a “bite” to them. I eliminated the black pepper and added 2TBSP, ganulated sugar and 1TBSP brown sugar, to add a little, subtle sweetness & eliminating the black pepper cut down on the bite. I made this recipe with my Home & Careers students and they loved it.
