Ginger-Lemon Oatmeal Cookies

Ingredients

  1. 1/2 cup (1 stick) unsalted butter, softened
  2. 1/2 cup brown sugar
  3. 1/2 cup granulated sugar
  4. 1 tablespoon grated fresh ginger
  5. 1 tablespoon grated lemon zest
  6. 1 teaspoon vanilla extract
  7. 1 egg
  8. 1 cup all-purpose flour
  9. 1/2 teaspoon baking powder
  10. 1/2 teaspoon baking soda
  11. 1/2 teaspoon ground cinnamon
  12. 1/2 teaspoon salt
  13. 1 cup old-fashioned oats
  14. 1/2 cup chopped pecans

Instructions

  1. Preheat the oven to 375 degrees F.
  2. Cream the butter with the sugars in a medium bowl with a hand mixer until light and fluffy, about 3 minutes. Add the ginger, zest, vanilla and egg, and mix well.
  3. In a small bowl, whisk together the flour, baking powder, baking soda, cinnamon and salt, and then add to the butter mixture and mix. Add the oats and mix until combined. Fold in the pecans with a wooden spoon. Spoon the dough onto baking sheets lined with parchment paper and bake until golden, about 10 minutes. Let cool 2 minutes, and then remove from the baking sheets.

These are delicious and so easy. Don’t skip the fresh lemon zest or ginger as key. Based on other reviews I creamed the butter and sugar for 5 minutes. Also, while first batch cooking I put dough in the refrigerator. Space your batter as they do spread a little. Thinner cookie. Yum!

These are great. The first time I made these I followed the recipe exactly and they spread quite a bit.  Now I cream the butter and sugars for at least five minutes and they don’t spread out as much.  The ginger and lemon zest nicely balance the sweetness of the sugars so they’re not too sweet.  It’s now one of my go-to recipes for cookies.
