Eggnog Ice Pops: Coquito

Ingredients

  1. 1 (13.5-ounce) can coconut milk
  2. 1 (12-ounce) can evaporated milk
  3. 3/4 cup sweetened condensed milk
  4. 1/8 teaspoon salt
  5. 1 large pasteurized egg yolk (see Note)
  6. 1/8 teaspoon ground cinnamon
  7. 1/2 teaspoon pure vanilla extract
  8. 1/3 cup light rum

Instructions

  1. Place all of the ingredients in a blender jar and blend to combine. Pour into a ice pop mold and insert wooden sticks. Freeze until set, at least 4 hours or overnight.

It was very easy to make. I made them for a BBQ. It turned out to be a very hot day and the ice pops were a hit. They brought back memories of going to Puerto Rico during the holidays. It was nice to have a taste of that during the summer.

I love the way it tastes but it didn’t freeze. I even had the same ice pop holders as she used on the show but when you try to take them out just the stick come out. We scooped the pop out with a knife and put it in bowls and ate it. This probably would be really yummy as a slushy drink.
