Cranberry and Date Roll Ups

Ingredients

  1. 1 cup butter
  2. 1/2 pound cream cheese
  3. 2 cups sifted all-purpose flour
  4. Salt
  5. Confectioners’ sugar, for board and garnish
  6. Pitted dates
  7. Cranberries

Instructions

  1. Preheat oven to 375 degrees F.
  2. Cream butter and cream cheese together. Blend in the flour and the salt, to taste. Chill for several hours until firm enough to roll out. Roll mixture to 1/4-inch thick on a cutting board generously sprinkled with confectioners’ sugar. Cut dough into 1 by 3-inch pieces with a pastry wheel. Put dates and/or cranberries on the bottom of each strip and roll up. Place fold side down on a sheet tray.
  3. Place in oven and bake for 15 to 20 minutes until golden brown. Sprinkle with confectioner’s sugar to serve.

These are a total hit in my house. They have a flavor like shortbread. My husband grew up in Germany and these remind him of his childhood. And my four kids can’t get enough of them either! These are great with morning coffee, or as a not too sugary dessert.

What I love about this recipe, is that there is no sugar used, and it couldn’t be easier to make with just a few ingredients. Of course with two sticks of butter and a package of cream cheese, this is probably not the most figure friendly cookie :o) Very good though! (I added a little lemon zest to my dough.)

Very easy to make. I added about 1/4 c of splenda to recipe which added a slight sweetness to recipe and sprinkled less powder sugar when served.
Have added this to my collection of favorite recipes.

I use craisins, that adds a little sweetness. It’s is very nice not to have a buttery melt in your mouth cookie. reminds me of Germany. good job.
