Ingredients

  1. 1 cup shortening (recommended: Crisco)
  2. 1 cup granulated sugar
  3. 1 cup brown sugar
  4. 2 eggs
  5. 1 teaspoon vanilla extract
  6. 2 cups all-purpose flour
  7. 1 teaspoon baking soda
  8. 1/2 teaspoon salt
  9. 1/2 teaspoon baking powder
  10. 2 cups rolled oats
  11. 1/2 cup chopped pecans
  12. 1 (6-ounce) package chocolate chips
  13. 1/2 cup shredded coconut

Instructions

  1. Preheat oven to 350 degrees F.
  2. In a large bowl, with an electric mixer, cream the shortening, granulated sugar, and brown sugar. Add eggs and the vanilla and beat until well blended. Stir in the flour, baking soda, salt, and baking powder. Add oats, nuts, chocolate chips and coconut, mix until combined. Spoon cookie mixture onto greased foil lined cookie sheet. Bake for 8 to 10 minutes. Transfer the cookies to a wire rack to cool.

Just tasted one freshly baked today – I like the recipe (with a few changes) and will probably make them again.
I used coconut oil in solid form (but was kind of soft) instead of crisco.
I cut the sugars from 1 cup each to 3/4 cup each.
I beat these until they were starting to look a bit fluffy.

I always try to lightly mix once flour is added for best texture on finished cookies.

Added about 1/2 – 3/4 cup dried cranberries (NOT the sugar coated ones), after adding oats, chocolate chips & nuts.

I always use a little more nuts and coconut than recipes call for, so used closer to 2/3 cup instead of 1/2 cup of each.

I made these cookies today.   I can recommend that it is a good recipe; however, I made a few minor changes.    I eliminated the pecans (due to allergy concerns) and added another cup of coconut.   I added 1/2 tsp of lemon extract as well as the vanilla in the recipe.   I added a little more than 6 oz of Dark Chocolate chips.     And 8 to 10 minutes is not quite enough to bake them.    I had to bake them closer to 12 to 14 minutes for the correct amount of browning and doneness – they were still cakelike and soft – not hard.     I used parchment paper and sprayed a little baking spray.   I used a cookie “baller” with a handle for ease of consistent measurement.     Still ended up with 4 doz cookies that were about 2.5 inches in diameter— a nice size.

I made these cookies exactly as written. I’ve never baked with Cisco before, and I am not sure I will again. These did not bake nicely, and they didn’t have any real flavor at all. The only thing they had going for them was the texture they had. Very delicate despite all the stuff that’s it in. However, I couldn’t taste any coconut, or pecan, or anything else.

Made these cookies, Yum, Yum. Did not have coconut so used dried cherries soaked in brandy. Also doubled the choc. chips.

Fantastic cookie!!! I used butter instead of crisco and 2/3 cup of crunchy pecan granola and reduced the oatmeal by 2/3 cups plus I added raisens. Very chewy on the inside.

Delicious! I add extra chocolate chips and nuts but instead of putting them in the batter I scoop the cookies out and press the extra goodies into the tops and sides of the cookies. They look like they came from the bakery!

Great cookie recipe makes dozens and keeps well. Great for making Christmas platters. I like them without coconut. I add extra pecans. It’s faster cookie making if you just make small balls with your hands
