Chocolate Chip Butterscotch Pie

Ingredients

  1. 2 tablespoons butter
  2. 1/2 cup light brown sugar
  3. 1/4 cup light corn syrup
  4. Pinch salt
  5. 1/4 cup heavy cream
  6. 8 ounces mascarpone cheese
  7. 1 1/2 cups heavy cream
  8. 1/2 cup sugar
  9. 1 teaspoon vanilla extract
  10. Pinch salt
  11. 1/2 cup mini-chocolate chips
  12. 1 (6-ounce) pre-made chocolate cookie pie crust (recommended: Oreo or Keebler)

Instructions

  1. For the butterscotch sauce: melt the butter in a sauce pot over medium-high heat. Add the brown sugar, corn syrup, and salt. Bring to a simmer and stir until golden amber in color, about 10 to 15 minutes. Remove from heat and slowly stir in the cream. Remove from the heat and set aside to cool.
  2. For the filling: add the mascarpone cheese and the heavy cream to a large bowl and whish until combined. Add the sugar, vanilla, and salt. Whisk until soft peaks form, then fold in the chocolate chips. Pour the filling into the crust, smoothing out the pie surface. Refrigerate for at least 3 hours and serve drizzled with butterscotch sauce.

The first time I made this, it was GREAT!!! The 3 times since then it will not set up!!! It doesn’t matter how long it sits in the fridge. I have to put it in the freezer then the fridge. I have watched the video again & I have done everything she does. I can’t figure out what is going wrong!! The only thing I can think of is it’s my fridge. It seems to be working right though otherwise.

I have made this pie at least 6 times now. Everyone loves it’s light taste. However, I have made raspberry sauce instead of butterscotch everytime. I put frozen raspberries in a saucepan with a little water and some sugar on med-high. Stir and mash the berries until it is puree like. The light taste of the pie with the chocolate and berry; perfect combo!! The office begs for this pie! Super easy! TIP: make sure to get the mini chocolate chips–I love chocolate, but it really makes a difference.

So good and very easy! A lot of other reviewers said it was rich but to me it tastes like thick whip cream with chocolate chips in it. The butterscotch sauce is amazing and should be used sparingly when drizzling so you do not over power the pie…YUM YUM
