Carrot Cake with Lemon Cream Cheese Frosting

Ingredients

  1. 4 (3-ounce) packages cream cheese
  2. 1/2 cup butter or margarine
  3. 1 2/3 cups confectioners’ sugar
  4. 1 teaspoon vanilla extract
  5. 1 tablespoon lemon juice
  6. 2 cups sugar, granulated
  7. 2 cups all-purpose flour
  8. 1 teaspoon salt
  9. 2 1/2 teaspoons cinnamon
  10. 1 teaspoon ground clove
  11. 1/2 teaspoon ground allspice
  12. 1 1/2 teaspoons baking soda
  13. 1 1/2 cups canola oil
  14. 4 eggs
  15. 3 1/2 cups carrots, grated
  16. 1 cup chopped walnuts

Instructions

  1. Preheat oven to 350 degrees F.;
  2. In an electric mixer beat the cream cheese and butter on high until smooth. Then add confectioners’ sugar. Continue to beat on high until the lumps have all dissolve. Finally, beat in vanilla extract and lemon juice on low speed until the frosting is completely mixed.;
  3. In a large mixing bowl combine, sugar, flour, salt, spices, and baking soda. Add oil to the dry ingredients and mix well. Add eggs; beat in one at a time.
  4. Once the batter is properly mixed, stir in carrots and walnuts. Pour the cake batter into a greased 9 by 13-inch pan and bake at 350 degrees F for 60 to 70 minutes or until golden brown.
  5. Once cake has cooled, frost and sprinkle chopped walnuts on top as a garnish.

I was looking for a carrot cake recipe that’s to die for and I just baked this one today. It was really good, but I wouldn’t say it’s my favorite. It is easy, however, and the lemon cream cheese frosting is delicious!

This carrot cake is delicious! I use all organic ingredients and the only thing I do differently, is I substiute the oil with organic unsweetened apple sauce. It results in a very moist cake without the calories of the oil. I’m just making this again for a party at a friends house for 12/23/12 and it was requested from people who have previously tasted it. The icing is yummy. I don’t usually care for other icings, however cream cheese icing is always delicious. Easy, tasty and there is never left overs when guest come over for a slice.

Easy to make and absolutely wonderful; the cream cheese frosting is awesome- very light tasting and creamy! If you like to “sample” the batter like I do, don’t be nervous that you can taste the oil; the baked result is moist and delicious! I added a small package of raisins for baking since I like raisins in mine, but I’m sure it’s still great without. I will definitely make this again, but I will probably do a layer cake method since the frosting recipe yields a large amount and it’s my personal preference.

we found the perfect carrot cake recipe!!! we didn’t have any baking soda so we substituted with baking powder doubled to balance out the acid and it turned out amazing!! the frosting is delicious and I will be making this for everyone to try!

I love carrot cake! I have never tasted better nor did I ever think that I would be able to say that I made it! I highly recommend!! Now, if you think that you will be able to make this and it be low fat, think again…..but if you want a very tasty treat this one is for you!

I looking for a carrot cake recipe that relies on the taste of carrot and spices, and this one fit the bill. The taste of the carrot is not overwhelmed by other flavors,and the batter raised just enough to be a good slicing bread. No comment about the frosting b/c I was only wanted the cake part. The downsides of this recipe is a common one, too much fat and sugar. Forget the napkin, my hand was covered in oil after a few bites. I will just cut down on sugar and oil next time.
