Calley’s Sweet Potato Pie

Ingredients

  1. 4 medium sweet potatoes
  2. 1/2 stick butter, softened
  3. 1/4 cup sugar
  4. 3/4 cup brown sugar
  5. 2 eggs, beaten
  6. 1 teaspoon pure vanilla extract
  7. 1/2 teaspoon ground cinnamon
  8. 1/8 teaspoon ground ginger
  9. 1/8 teaspoon ground nutmeg
  10. 1/8 teaspoon ground allspice
  11. 1/2 teaspoon salt
  12. 3/4 cup evaporated milk
  13. 1 unbaked pie crust
  14. Maple Whipped Cream, optional, recipe follows
  15. 1 cup heavy whipping cream
  16. 1/4 cup confectioners’ sugar
  17. 2 tablespoons maple syrup

Instructions

  1. Preheat oven to 350 degree F. 
  2. Bake sweet potatoes for 1 hour in the oven on a baking sheet. When done, let cool. Scrape the pulp out of the skin, transfer to a large bowl, and mash. Set aside. 
  3. In a medium bowl, beat together butter, sugar, and brown sugar until creamy. Add eggs, vanilla, cinnamon, ginger, nutmeg, allspice and salt. Add evaporated milk and stir mixture into sweet potatoes. Beat together with mixer until smooth and pour into an unbaked pie shell. 
  4. Bake on bottom rack of oven for 1 hour or until center of pie is firm. Serve warm. Add dollop of whipped cream if desired.
  5. In a medium bowl, beat together whipping cream and confectioners’ sugar. Add maple syrup. Beat together until soft peaks form.

This was really delicious. Like some other reviewers, I was nervous about the “4 medium sweet potatoes” as size is relative. I ended up using 2 large ones, which was about 2.5 cups of mashed sweet potato. The flavors were great, and if anything, I thought it was maybe a little bit too sweet for my taste. Next time, I’ll probably just do the 3/4 cup brown sugar and leave out the white sugar altogether. I imagine other reviewers who thought it wasnt sweet enough might have used more sweet potato, making it less sweet. I also doubled the cinnamon and nutmeg, since it seemed like too little for an entire pie. I used half Indonesian and half Vietnamese Cinnamon and it was lovely.

I accidentally lost my Grandmother’s recipe, and my Dad is insistent that I am the only one who can make her pies just like her. Last year I used this recipe and it went over so well, he couldn’t tell the difference. My husband actually liked this recipe better!
