Breath Mint Pie

Ingredients

  1. 6 ounces (1 1/4 sticks or 10 tablespoons) butter
  2. 6 cups chocolate sandwich cookie crumbs (recommended: Oreo(r))
  3. 1 quart mint chocolate chip ice cream, slightly softened
  4. 1 pound dark chocolate covered mint candy, frozen (recommended: Junior Mint)
  5. 1 cup whipped cream
  6. 1 cup chocolate syrup
  7. 12 mint sprigs

Instructions

  1. In saute pan, heat butter over medium-low heat until softened. Remove from heat, add cookie crumbs to pan and stir until butter is evenly distributed through the crumbs.
  2. Line a “half sheet” size pan (approximately 13 by 18 by 2 inches deep) with plastic wrap. Spread half the cookie crumb mixture over the plastic.
  3. With a mixer on lowest speed (or by hand), combine ice cream and mint candy, mixing slowly and trying to avoid breaking up the mints.
  4. Pour the ice cream mixture over the cookie crumbs and spread gently throughout the pan, trying not to break the cookie crumb base. Top evenly with remaining cookie crumb mixture, cover with plastic wrap and re-freeze for a few hours.
  5. Cut into 12 triangular pieces, by cutting in half lengthwise, then thirds crosswise, and cutting each resulting rectangle into right triangles. Serve each triangle topped with whipped cream, chocolate syrup, and mint sprigs.

Wait though. Unlikely reviewers made this is in 13 x 18 pan. 6 cups of oreo crust, divided into two layers – top and bottom, per the recipe, is a dusting, not a crust. I can see using that little amount on top as a crunchy topping… I’m following directions but have decided to veer off. Ice cream filling seems too thin. Not trusting proportions.

I didn’t want to rate this, since I haven’t made it yet, but I had to rate it in order to post this question/comment. The photo with the recipe doesn’t look at all like the the directions would lead me to believe the finished product looks like (it just looks like a large scoop of ice cream drizzled with chocolate sauce on a plate). Can FN please post a better photo?

AWESOME. My husband “who doesn’t like desserts” and three-year old LOVED this! We’ve modified for simplicity by having my 3 y/o smash the oreos with a rolling pin in a large baggie; melted the butter in the micro on low; hand mixed Jr.Mints in softened ice cream with wooden spoons by folding- just easier clean up for Mom! It’s going to the SUPER BOWL!! (party, that is!)

This is a hit all year-round! The oreo crust and mint ice cream combine for an out-of-this-world flavor! I brought this to one family gathering and am now asked to bring this each time we get together! An added bonus is that it is soooo easy to make!

I just made this for a dinner party and it was a HUGE hit, everyone loved it!! Instead of junior mints, I used the new premium mint flavored M&Ms. It’s exactly what the recipe calls for – a white mint coated in dark chocolate. DELECTABLE!

I’ve been a patron of his Johnny Garlic’s restaurant from since before it caught fire. I think that was in like 2001 or something. Anyway, we always make sure to leave room for the Breath Mint Pie – which is hard to do with the size of his portions and it always tastes so dang good. 🙂
