Ingredients

  1. 6 cups blueberries, rinsed and lightly dried
  2. 1 tablespoon cornstarch
  3. 1/4 cup sugar
  4. Pinch salt
  5. 1/2 cup all-purpose flour
  6. 1/2 cup quick-cooking oats
  7. 1/4 cup packed light brown sugar
  8. 1/4 cup sugar
  9. 1/4 teaspoon ground cinnamon
  10. 1/4 teaspoon ground nutmeg
  11. 3/4 cup chopped pecans
  12. 1/2 stick room temperature unsalted butter, cubed
  13. Whipped cream, for topping
  14. Ice cream, for topping

Instructions

  1. Preheat oven to 375 degrees F.
  2. Toss blueberries, cornstarch, sugar and a pinch of salt together in a bowl.
  3. Combine flour, oats, brown and white sugar, cinnamon, nutmeg and pecans in a bowl. Add butter and pinch into chunks. Mix until it looks crumbly.
  4. Add the blueberries into a 2-quart baking dish. Top evenly with the crumb mixture. Bake for 40 minutes. Serve with ice cream and whipped cream.

Overall, very good. I should have cut the sugar down as reviewers mentioned. I did double the topping as reviewers suggested. I didn’t love the nutmeg, but that could be just me. Will make again.

Made sugar free version with monk fruit sweetener. And splenda brown sugar mix. Not totally free but us diabetics have to get our tasties on too. Can’t tell the difference so my neighbors say.
