Apple Crisp

Ingredients

  1. 2/3 cup rolled oats
  2. 1/3 cup all-purpose flour
  3. 1/3 cup dark brown sugar
  4. 1/3 cup pecans, toasted, chopped
  5. Pinch fine salt
  6. 6 tablespoons cold unsalted butter, cut into bits
  7. 4 medium baking apples, such as Braeburn, Rome, or Golden Delicious,
  8. Unsweetened whipped cream, optional

Instructions

  1. Preheat the oven to 375 degrees F. Lightly butter 6 (6-ounce) ramekins.
  2. Whisk the oats, flour, brown sugar, pecans, and salt in a medium bowl. Rub in the butter with your fingertips until it is in even, pea-size pieces. Peel, core, and coarsely chop the apples and divide evenly among the ramekins. Scatter the crisp topping evenly over the fruit in each ramekin.
  3. Transfer the ramekins to a baking sheet and cook until the fruit bubbles around the sides and the top is golden, about 30 minutes.
  4. Preheat a broiler. Place the crisps about 4 inches from the broiler and cook until golden brown, about 30 seconds. Let cool about 15 minutes before serving. Serve warm with whipped cream, if using.

I went good eats on this recipe and brought the brown sugar down to 1/4 cup and then drizzle a good amount of honey on the apples so they get flavored and sweeter, then do everything else the same and they turn out great, plus i serve a la mode with vanilla ice cream. Good recipe though, love putting pecans in this.

The topping is very good! love how crunchy it is! The apple filling needs more flavor though. I would add brown sugar & cinnamon for sure. I was definetly disappointed. Not one I would serve quests until I get it modified a little.

I made this on the fly for dessert one night and it came out great. I added some apple juice to the apples before cooking because it seemed like it needed some liquid and sprinkled cinnamon and sugar (splenda) on the apples for added flavor and it worked great. The only thing that didn’t come out to well was the topping but it might have been because I didn’t have any brown suger so it was only oats surgar and butter. It was to chewy and the oats were not cooked enough. My husband loved it but also said the topping was to chewy. Will make it again (tonite!) and see if the brown suger will help the topping. Also think the topping needs more butter to help the oats cook better. I used a 1.5 qt casserole dish instead and 4 apples filled it just right. Overall, it is simple to make and has a great “apple pie” taste.

I agree with some others that said it comes out too dry. Next time I would probably toss the apples in some flour, cinnamon and sugar. I think after baking then it would come out a little more moist. Definately need to add cinnamon for flavor. I did bake in a 1.5 qt casserole dish and came out fine. Definately test an apple to make sure it is soft before removing from oven. Some of my apples were still too firm and crunchy.Topping was good and crunchy.

Everyone always asks me how I make this. In order to make it even more diabetic friendly, I substitute brown sugar splenda for the brown sugar, and I add cinnamon for more flavor. I also make it in a pan sometimes instead of individual ramekins, and it always comes out great. Thanks, FN!

I tried this once the way the recipe suggests, second time I used a few different types of apples and even a pear. Toasted the pecans again, that part is wonderful! and added a teaspoon of cinnamon. It was delish!

I was really looking forward to making this recipe after going apple picking at Nashoba Valley in MA. Unfortunately, I didn’t have the pecans, so I substituted in walnuts. It came out really well… moist with a crunch, delicious. I can’t wait to try it again with pecans!
