Apple and Blueberry Hand Pies

Ingredients

  1. 2 boxes prepared frozen puff pastry
  2. 6 apples
  3. 1 lemon, juiced
  4. 2 tablespoons butter
  5. 1/4 cup honey
  6. Pinch salt
  7. 3/4 cup fresh blueberries
  8. 1 egg
  9. 1 teaspoon ground cinnamon
  10. 2 tablespoons sugar
  11. All-purpose flour, for dusting work surface

Instructions

  1. Preheat oven to 450 degrees F.
  2. Thaw the sheets of puff pastry as per the box instructions.
  3. Peel and core the apples and cut into quarters. Toss the apples in the lemon juice so they do not brown while you are dicing them. Cut each quarter into about 2 to 3 (1-inch) pieces.
  4. In a large saute pan over medium heat, melt the butter until lightly browned. Add the apples and saute for about 3 to 5 minutes until lightly browned. Add the honey and a pinch of salt and toss to mix in well, transfer to the oven and roast for about 15 minutes until apples are soft. Mash with a fork while still warm. Let the apples cool to room temperature and gently fold in the berries.
  5. Turn the oven down to 400 degrees F.
  6. In a small mixing bowl beat 1 egg. In another small bowl, mix together the cinnamon and sugar.
  7. Lay the thawed puff pastry sheets out flat on a floured work surface. Cut large circles out of the pastry with a ring cutter, about 4 per pastry sheet. Brush with the egg-wash on the outer edge of half of the circle. Spoon 2 tablespoons of the apple berry mixture in the center of each round of pastry dough. Fold the dough over to cover the filling, making a semi-circle and sealing the edges.
  8. Place pies on a buttered oven tray. Repeat with the rest of the pastry dough. When all of the pies are on a sheet tray cut air holes in the top of each pie and brush the tops with egg wash. Sprinkle with the cinnamon sugar. Bake for about 20 to 25 minutes until puffed and nicely browned.

These could have been a little sweeter, but a good, fresh flavor. The process of assembling the pies took longer than expected, too.

I made this dessert for a dinner party and the adults and children alike were very impressed. The recipe was surprisingly simple and ended up delicious. They do end up cooking much faster than the recommended time so be sure to keep an eye on them. Also, so make the filling sweeter, I added 1/3 cup of brown sugar. I also used raw cane sugar with the cinnamon to top the hand pie. All in all, this was a great recipe.

This recipe was easy to prepare, but was almost devoid of flavor. I should’ve guessed from looking at the ingredients, I guess. Also, I was not a fan of the puff pastry. Flaky is not the word, I’d use – a crumbly mess is what I’d say.

I do like the method however and I’ll try it again with traditional apple pie spices included with the apples and using pie dough instead of puff pastry.

The hand pie appealed to me in that you can have the “apple pie” experience without the whole leftover pie. Also, much faster cooking time.

This dessert is light and full of bright flavor. It’s not too sweet with a nice flaky pastry. I served it with pure vanilla whipped cream, but it is wonderful by itself. My family loved it.

I didn’t exactly follow the recipe- but it turned out better than I thought. I found that the granny apples work well, but I probably would have used an equal portion of honey and brown sugar to make it sweeter. Didn’t use the blueberries but I’m sure it would have been delicious either way. When you’re folding the puff pastry into individual pockets, make sure to pile HIGH and it’s ok if it overflows on the edges. Just use your fork to close it (like on a real pie). Oh and it doesn’t need to be a crescent shape- I did a box shape to maximize the pastry dough and it puffed up just fine. Looked professional too. Sprinkling cinnamon sugar just gives it a toasted color- not taste- so I recommend drizzling butter frosting or white chocolate for cosmetic appeal. It also contributes to the sweetness of the hand pie overall. I’ve been told they resemble “turnovers” too and everyone LOVED them. Great for breakfast or a sweet ending to any meal. A++

These pies looked absolutely delicious and they tasted just as good. Made them for a July 4th bash and all were impressed! They were very easy to make, just took some time, but definitely worth it.

Realy Great. Although i do not like blueberries so i just used apples , came out great. i would recomend to keep an eye on them when in the oven, they cook faster than expected. : )
