Anita’s Blueberry Cobbler

Ingredients

  1. Nonstick cooking spray
  2. 1 (16-ounce) bag (2 cups) frozen blueberries (keep frozen until ready to use)
  3. 1 1/2 cups sugar, divided
  4. 1 cup all-purpose flour
  5. 1 teaspoon baking powder
  6. 1/2 cup (1 stick) unsalted butter, melted
  7. 3/4 cup milk (regular, lowfat or skim)
  8. Ice cream, for plating, optional
  9. Blueberries, for garnish, optional

Instructions

  1. Preheat the oven to 350 degrees F. Coat a 9 by 12-inch baking pan with cooking spray. 
  2. In a large bowl, combine the blueberries and 1/2 cup of the sugar. Toss to combine and set aside. 
  3. In a medium bowl, combine the remaining 1 cup sugar, the flour, and baking powder. 
  4. In a large bowl, beat the butter and milk together until smooth. Gradually beat in the flour mixture until smooth. Pour the batter into the prepared pan, then scatter the blueberries over the batter, letting them sink in, without mixing. Bake until the top is golden brown, 35 to 45 minutes. Let cool slightly before serving. Spoon the cobbler into bowls and top with ice cream and/or blueberries, if using.

I made this cobbler. it was to sweet for my taste. I did like the cake part of it so I remade and used a lot less sugar. I used a 1/2 cup of sugar just in the bread part of it. I just tasted it its really good. u could bump the sugar to 3/4 cup if u want it a little sweeter. but what I did worked for me. I would make this again.

Taste great and easy to make. I used fresh berries rather than frozen and it worked just fine. Next time I might use a slightly smaller baking dish in hopes that is will rise a little more but it’s great as is. I used skim milk. I might try whole milk next time just to see the difference.

Don’t bother with this recipe. There are so many superior recipes out there and this one is bland and disappointing.

This is delicious. I used 2 cups fresh blueberries instead of frozen because they are good and cheap right now. I added a little nutmeg and squeezed half a lemon into the mixture. I put the blueberry mixture in the bottom of a pan and the batter on top. You can reduce the butter to 6 tablespoons and get the same effect. My husband likes sweet, so I used the full amount of sugar. It is very good.

Great recipe added one half lemon to berries and vanilla and 1/8 tsp cinnamon to batter.

ABSOLUTELY DISGUSTING. WAY TOO MUCH SUGAR!!! 1 1.5 CUPS FOR ONE BAG OF BLUEBERRIES????? OMG, IT WAS SO SWEET I WANTED TO THROW IT OUT.

YOU DO NOT NEED 1/2 CUP OF SUGAR FOR ONE BAG OF BLUEBERRIES FIRST OF ALL, AND SECONDLY, THE BATTER HAS WAY TOO MUCH SUGAR IN IT AS WELL. I WOULD SAY AT MOST 3/4 CUP WOULD HAVE BEEN MORE THAN SUFFICIENT HERE.

ALSO, SHE SAYS TO POUR THE BATTER OUT FIRST AND PUT BLUEBERRIES ON TOP. THERE IS WAY TOO MUCH BATTER AS WELL. IT’S ENOUGH FOR A CAKE AND IT MAKES NO SENSE TO PUT IT ON THE BOTTOM AND THEN EXPECT IT TO BROWN??? BROWN WHAT? THE BLUEBERRIES? GOOD GRIEF, THIS RECIPE SHOULD BE REMOVED, IT’S ABSOLUTELY DISGUSTING.

THE BUTTER AS WELL!???? AN ENTIRE STICK OF BUTTER???? FOR A SACK OF BLUEBERRIES??????? OMG, HEART ATTACK WAITING TO HAPPEN HERE. THIS IS HONESTLY THE WORST ONLINE RECIPE I HAVE EVER USED IN MY LIFE.

Delicious & VERY simple to make….which is a must for me since I have a disabled husband, 3 children & a job. :
Like someone already mentioned, I did have to cook it about 20-25 minutes longer than the recipe stated.
