I made this today as a side, so I skipped the chicken. It turned out really well! The dressing was delicious!!
I’m not a fan of thyme so I used a wee bit of dried tarragon instead – about half teaspoon. I also used an additional half tablespoon of mayonnaise because I like it extra creamy. I thought it was lovely and will make it again.
I’m usually a huge Ellie fan – I have two of her cookbooks and regularly feature her recipes on my blog. So… I had high expectations for this recipe, but it definitely fell short. The thyme was OVERPOWERING. It’s all I could taste. And speaking of flavor, the rest of the dish had little of it. I might has well have been eating a bowl of greek yogurt with thyme.
If you are expecting something like a sweet Waldorf Salad, this isn’t it. The sauce by itself isn’t incredibly tasty. However, altogether on the wrap it turns out pretty good.
Loved it and will make it often. Used Craisins instead of grapes, because I had those on hand. Didn’t use much thyme.
I got this recipe from her book, and there was no grapes, but even without grapes it is fantastic. Even my picky husband loved it. I could eat this for lunch every day and would not feel like I’m missing out on anything.
This was amazing. Best chicken salad i have ever had in my life. the fruit makes is so fresh and the yogurt makes it super light! you wont ever miss mayo based salads again!
yummy as a salad or on a wrap! i substituted raisins for the grapes and almonds for the walnuts and didn’t sacrifice any flavor. i didn’t have thyme, so i’m not sure if missed out with that. my husband said the sauce seemed fatty, even though it was mostly non fat yogurt. that’s a good sign if he can’t tell the difference! could easily be a dinner staple.
I was able to eat the wrap at lunch…barely. Everything would have tasted fine if I didn’t put the thyme in the salad. The thyme just doesn’t seem to work with this recipe and it was over powering. Not sure what other herb to use but will figure something out for next time. Also, I should have put more salt and pepper in it.
Way to go Ellie! My husband and I loved this recipe. It was light and delicious.
