Ingredients

  1. 3 cups chopped romaine lettuce
  2. 1 plum tomato (preferably Roma), chopped
  3. 1/2 cucumber, chopped
  4. 3 ounces cooked and chopped skinless lean chicken breast
  5. 1/4 cup chopped red onion
  6. 1/4 cup shredded carrots
  7. 1/4 cup canned beets, drained and chopped
  8. 2 tablespoons canned black beans, drained and rinsed
  9. 2 tablespoons canned sweet corn kernels
  10. 2 tablespoons canned garbanzo beans (chickpeas), drained and rinsed
  11. Dash freshly ground black pepper
  12. 2 tablespoons reduced-fat Parmesan-style grated topping

Instructions

  1. Place lettuce, tomato, cucumber, chopped cooked chicken, onion, carrot, beet, black beans, corn, garbanzo beans, in a bowl and toss well to mix. Enjoy!

I made this by the recipe first time, second time I made a couple of substitutions (not a fan of chickpeas and really liked it.
