Stir-Fried Chicken and Vegetables

Ingredients

  1. 1 tablespoon peanut oil
  2. 2 to 3 cloves garlic, minced
  3. 1 tablespoon minced fresh ginger
  4. 1 pound boneless, skinless chicken breasts, cut into strips
  5. 1 medium onion, diced
  6. 2 cups sliced carrots
  7. 1 red bell pepper, seeded and sliced into thin strips
  8. 2 cups sugar snap peas
  9. 1 (15-ounce) can baby corn, drained
  10. 2 cups broccoli florets
  11. 1/4 cup reduced-sodium soy sauce
  12. 2 teaspoons cornstarch
  13. 1 cup reduced-sodium chicken broth

Instructions

  1. Heat oil in a wok or large skillet over medium-high heat. Add garlic and ginger and cook 1 minute. Add chicken and cook 3 to 4 minutes, until starting to brown, stirring constantly. Add onions, carrots, and peppers and cook 1 minute. Add snap peas, corn and broccoli and cook 2 minutes. Add soy sauce and cook 2 minutes, until vegetables are crisp-tender.
  2. Dissolve cornstarch in chicken broth in a small bowl and add to wok. Simmer 2 minutes, until sauce thickens. Serve over rice.

i tried this this week and it was my first time trying to stir fry anything it ca me out perfect!! if you have picky kids i would suggest this to you i added more broccoli and left out the peas and added water chesnuts it was FABULOUS AWESOME JOB ROBIN !!!!! plus its a very quick meal 20 mins tops including prep and its a 1 pan deal so less mess!!! only thing i can suggest is a little more red pepper and more soy at the end! MUST TRY THIS DISH WILL PLEASE THE FAMILY! ( great with pork and beef aswell)
