Roasted Chicken with Smokey Orange Sauce

Ingredients

  1. Cooking spray
  2. 8 (5-ounce) skinless chicken breast halves (with bone)
  3. Salt and ground black pepper
  4. 1 cup orange marmalade
  5. 1 tablespoon reduced-sodium soy sauce
  6. 1 teaspoon liquid smoke

Instructions

  1. Preheat oven to 400 degrees F. Coat a large roasting pan with cooking spray.
  2. Season chicken all over with salt and black pepper. Arrange chicken in prepared pan and set aside.
  3. In a small bowl, combine orange marmalade, soy sauce and liquid smoke. Mix until blended. Pour mixture over chicken.
  4. Roast 35 minutes, until chicken is cooked through. Serve 4 chicken breast halves with this meal and refrigerate remaining chicken until ready to use.
  5. Yield: 4 servings (with leftovers for additional meals such as Robin’s Chicken Quesadillas and Thai Chicken Salad)

While this was by no means a bad dish, my husband and I agreed it was just bland and boring. If I ever tried it again, I’d sear the chicken breast first in a skillet and then pour the sauce over them to finish in the oven. Maybe the sauce would have held onto the chicken better then and given it more flavor. Nice recipe idea, but poor execution.

This is my first TV recipe I have ever tried. My goal is to learn to cook this summer. 🙂 I made just as the directions stated with only a couple of minor changes, thanks to all the other reviews. I made the marinade and placed it over the chicken then put it in the refrigerator for a couple of hours. I then placed the chicken in a new pan and placed the marinade on top, only the thick part. (since people stated that the marinade was too thin). My whole family loved it! Definitely made my new cookbook for keeper recipes. Thank you Robin!

This is on my use list pretty much every other week. I double the soy & smoke. Cook for 30 min then flip and spoon sauce. Go another 10 min. Perfect! We add the chicken to other meals too. So good.

This chicken is so delicious but not enough sauce for me.Next time I’ll double the marmalade, liquid smoke and shoyu. I also think it would be better if allowed to maranate for a few hours. I put a little water in the panr so I could have a dipping sauce,this added to the flavor. I will definintely make this recipe again.

My husband and I are not ones for the smokey flavor so I omitted that portion and added additional soy sauce. My husband loved this meal.
