Ingredients
- 1 (16-ounce) package chicken tenders, rinsed and patted dry
- 1/2 cup prepared pesto
- 1/2 cup mayonnaise
- 1 (16-ounce) loaf ciabatta bread, sliced in half horizontally
- 4 slices pre-sliced mozzarella
- 1 cup baby arugula or spinach, rinsed and patted dry
- 2 tomatoes, sliced
- 15 fresh basil leaves
Instructions
- In a plastic bag, combine chicken tenders and 1/4 cup of pesto, set aside and let sit for 15 minutes.
- In a small bowl, stir together 1/4 cup pesto and mayonnaise. Spread mixture on both sides of ciabatta; set aside.
- Preheat an oiled grill pan over medium-high heat. Grill chicken tenders 5 minutes per side. Remove and let rest for 5 minutes. Turn the heat down to medium and re-oil the grill pan.
- Place cheese on both halves of bread. Add arugula, then tomato, then basil leaves, then pesto chicken to bottom piece. Top with top half of bread. Place onto the grill pan and place a heavy pan on top of the sandwich. Grill for 3 minutes per side or until cheese starts to melt.
- Cut into 4 portions and serve.

These are awesome! Perfect for a weeknight when you’re tired from work and don’t want to spend a lot of time in the kitchen. I use my panini press (has a grill surface) to both grill the chicken and the sandwiches. I tweak the sauce a bit by mixing equal parts pesto and mayo (more pesto adds more flavor in my opinion, tried it both ways), and a pinch of red pepper flakes to kick it up. Costco makes a great basil pesto that works perfectly for this recipe if you want to save time. I will continue to make these for sure!
Yum!!! My four year old and my husband both loved it. It will be a staple at our home from now onwards due to its simplicity. Had just the basil in my house, but I am sure it would have been just as great with arugula and spinach too. Added some freshly cracked black pepper as we like it a bit spicy. She’s done it again! For an informal summer supper, this was perfect.
This was so simple and tasty. I grilled my chicken outside, blended up some pesto, and made my own ciabatta from frozen pizza dough to add that extra little bit of love! That is what I love about Sandra’s recipes. When I have the time I can bump them up a little bit but when I am more pressed for time she has great short-cuts! The family loved it! It will Tijis will go into the regular sandwich-night rotation! Thanks Sandra!
This recipe is so easy and so flavorful! I have made this recipe numerous times for my family and friends. It is always a hit!
I had company over for lunch and served this with tomato basil soup. The sandwiches were good and very filling….I pressed them in my panini maker. Not having enought time to make my own pesto, I purchased some from a local Italian restaurant. Next time I will be sure to add more salt to the chicken while cooking…it will bring out even more flavors to the sandwich.
