Maple-Orange Chicken with Acorn Squash and Sweet Potatoes

Ingredients

  1. 1 small to medium acorn squash, peeled, seeded, and cut into 2-inch pieces
  2. 2 sweet potatoes, peeled and cut into 2-inch pieces
  3. 2 leeks, rinsed and chopped
  4. 5 (5-ounce) skinless chicken breast halves (with or without bone)
  5. Salt and ground black pepper
  6. 1 cup orange marmalade
  7. 1/2 cup reduced-sodium chicken broth
  8. 1/2 cup orange juice
  9. 1 tablespoon hoisin sauce
  10. 1 tablespoon maple syrup
  11. 1/4 cup chopped fresh parsley leaves
  12. 1 to 2 tablespoons finely chopped fresh rosemary leaves

Instructions

  1. Place squash and sweet potatoes and leeks in the slow cooker. Season chicken all over with salt and black pepper and place on top of vegetables in slow cooker. In a medium bowl, combine orange marmalade and remaining ingredients. Pour mixture over chicken and vegetables. Cover and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours.
  2. Serve 4 of the chicken breast halves with squash and potatoes on the side and extra sauce spooned over top (reserve remaining chicken for pizza). Top with parsley and rosemary just before serving.

In theory it sounded good. It was quite simply the worst thing I have ever cooked. I wish I had read the reviews before I spent the money on the ingredients. I spent at least an 1 1/2 hr trying to “improve” this disaster after coming home from a 9 hour day expecting a good meal. I was so incensed that I ripped up the recipe and threw the whole thing away. Note: no one should “ever” include orange marmalade in any recipe. You might as well pour a bottle of children’s orange flavored Triaminc in the mix. This is just AWFUL!

It sounded very promising but the overall result was extremely dissapointing. Either something is missing or there are one too many ingredients. I couldn’t decide what the problem was but there definetly was one.

I’m pretty disappointed. I read the reviews on this recipe, and still decided to give it a shot. I put the chicken on the bottom of the cooker, did plenty of research on peeling the acorn squash (save yourself some time and use a very sharp knife – there’s no way a veggie peeler will do that job! When I came home from work (5 hours into cooking time on low, the dish had made our house stink to high heaven. I still tried to give the dish a chance – although it didn’t look or smell appetizing. My husband and two kids (9 and 5 wouldn’t touch it. We ended up going out for bbq instead. This dish just wasn’t for us, I guess I’m a good ol’ Southern gal, with tastes closer to that of Paula and Emeril’s dishes.

Although this recipe is very easy, we didn’t really care for it. The squash was overpowered by the sweet potatoes. The combination of ingredients created a brown dish not too visibly appealing. We thought that the sauce had too much marmalade and not enough salt. The sweet potatoes and chicken were pretty good, so the dish is not horrible. I won’t make it again.

It was easy and very juicy. I put the chicken on the bottom to soak up the juices. My picky husband loved it too.

Tasty, but definitely needs tweaking. The final product ends up really sweet and it needs something to cut the sugar. I added extra hoisin sauce, some soy sauce, and some hot pepper flakes. It could also use a bit of extra salt. Thigh meat also works really well in it.

his was a good cold evening dinner treat. I did change it up a bit after reading the reviews. I put in two tablespoons of hoisin sauce and the zest of one orange. Used a combination of oriental vegestables over brown rice. We
loved it.

My 98 yer old father-in-law is a very picky eater, but he loves sweet potatoes and chicken. He REALLY liked this. He even asked me to make it again!!!.

I like the flavor combination and the ease of this receipe. I work full time and am the mom of 2 kids under 2 years of age. Although this is not my husbands favorite the kids like it and it is a one pot meal with little clean-up. That makes it a winner in our home.
