Ingredients
- 4 boneless, skinless chicken breasts halves
- Salt and pepper
- 1/3 cup vegetable oil
- 1 teaspoon minced garlic
- 2 pounds yellow onions, halved and sliced
- 3 tablespoons yellow Peruvian chile or aji amarillo paste (or diced green chiles)
- 1 cup freshly squeezed lemon juice, about 5 to 6 lemons
Instructions
- Season both sides of the chicken liberally with salt and pepper. Heat the oil in a deep saucepan, add the chicken and sear on both sides until golden brown, about 2 minutes on each side. Remove the chicken and add the onions and garlic and cook at medium-low heat until the onions are golden brown, about 10 minutes. Season with salt and pepper, stir in the yellow chile and return the chicken to the pan. Spoon some of the onions over the chicken, cover and cook for 10 to 15 minutes, until chile sauce has completely infused the mixture and the chicken is cooked through. Add the lemon juice and cook another 10 minutes, to allow flavors to meld.

This recipe need a little help. First, only use the juice of one lemon. That is simply enough. I also used chicken thighs instead of breast since I hate chicken breast.
I also cooked this in a large Le Creuset (sp? cast iron with enamal pan which I swear by and seems to enhance flavor. If you do this the recipe is amazingly tasty.
I rated this only a 3 star since as the recipe is I don’t think anyone would like it.
YUMMY! Yummy! Yum! I loved this recipe very much because I love lemons. I loved them in the onions. What is also nice about this recipe is that you can adjust flavors (i.e) more, less lemons, more less chile. But, recipe is just right the way it is.
My Meyer lemon tree was generous with lemons this year so I decided to make this dish as I had a surplus of them. It made really, really good chicken, but the lemon taste was terribly tart and the onion-garlic was so hot it made my eyes water. Maybe you have to be a Latino to enjoy this dish as everyone else seems to like it a lot.

This is a very good chicken recipe. I would agree with some of the others that the lemon in this recipe is very strong and I love anything that is lemon. I will make this again but will cut back on the lemon juice to 1/2 to 2/3 cup.
This was a really good meal. I couldn’t find the aji peppers so I used green chiles. I also used the lemon from the bottle because Krogers didn’t have any lemons. My husband and daugther loved it. This is a keeper. I also love Ingrid. I saw some unpleasant comments about her on this site. It’s not about what she wears. I have made the hamburgers from her show also. They were GREAT!!! My husband loves her and her boobs. Who cares, she seems nice and I love her recipes and enthusiasm. You go INGRID!!!!!!
I think Food TV should have an option to report on people for making inapporpriate comments. Some people use the rating system by judging the chef by politics, looks, etc rather than on the food itself. This is just wrong.
great recipe it came out so good. my daughter 8 yrs old is such a picky eater. she eats and tries nothing. she loved it. will make more next time
