Ingredients
- 3/4 cup hoisin sauce
- 3 scallions, coarsely chopped
- 5 cloves garlic
- 1 2-inch piece fresh ginger, sliced
- 1 jalapeno pepper, stemmed and halved (remove seeds for less heat)
- Zest and juice of 2 limes, plus lime wedges for garnish
- 2 tablespoons rice vinegar
- Kosher salt and freshly ground pepper
- 2 pounds skin-on chicken thighs and drumsticks (separate pieces)
- 1/2 cup rice vinegar
- 2 tablespoons sugar
- Kosher salt
- 1 seedless cucumber, thinly sliced
- 1/2 red onion, thinly sliced
Instructions
- Prepare the chicken: Preheat a grill to medium on one side. Combine the hoisin sauce, scallions, garlic, ginger, jalapeno, lime zest and juice, vinegar, and salt and pepper to taste in a mini food processor or blender; process until almost smooth. Season the chicken with salt; toss with the hoisin mixture in a large bowl.
- Make the salad: Bring the vinegar, sugar and 1 1/2 teaspoons salt to a boil in a small saucepan, stirring. Remove from the heat; stir in 1/4 cup ice cubes until melted. Toss the cucumber and red onion in a serving bowl with the vinegar mixture; place in the refrigerator.
- Grill the chicken over direct heat until the skin is crisp, 5 minutes per side, basting with extra marinade. Transfer to the cooler side of the grill; cover and grill until cooked through, 10 to 15 more minutes. Serve with the cucumber salad and lime wedges.

The Hoisin sauce was a great flavor for the grilled chicken when looking for something other than plain bbq. Our chicken did darken and crisp due to the sugars in the marinade but flavor was outstanding. Cucumber salad was simple but very good as well.
Thumbs up from both the hubby and I. I didn’t have any fresh jalapeños, so I subbed pickled ones. Worked just fine. The cucumber salad is similar to something I’ve made for years, and we love it. I had half an orange bell pepper and added it with the onions and cukes. Yum! Thanks for the recipe!
We love this recipe! The cucumber salad is definitely the showstopper and has been in our permanent rotation for going on five years. For a less sweet chicken alternative, we sprinkle Saté seasoning from Penzey’s on skinless, boneless chicken thighs and grill like normal. We also usually serve this with a little sushi rice and sweet chili sauce on the side. All of it together is incredible!
Oh my goodness! Rare is a recipe that my whole family like and this is one of them!! My kids are a bit on the picky side and they both LOVED it! Actually all 4 of us loved it! I didn’t change the recipe much, but I did add maybe a tablespoon of soy sauce and oyster sauce. I marinated them about a day and a half because I didnt get to make them the night I was intending but the next night. DEFINITELY a keeper recipe! 🙂
This was a really great recipe! The marinade was delicious and so flavorful. I only used one jalapeno as the recipe called for and it was spicy but not too much. If you like extra spicy then do 2 peppers.I didn’t grill the meat but cooked it in an iron skillet on the stove. It browned really well and then was fall off the bone tender. I served it with jasmine rice and the cucumber salad. My boyfriend doesn’t like red onion so I used a sweet vidalia onion instead. The salad was so good! Next time I will double the salad recipe. I will definitely do this one again!
Delicious dish that is refreshing with fresh flavors and very quick to make. Nice change form the typical BBQ tomato based sauces. When I make this again, I will marinate the chicken overnight in the sauce to see if there is a big difference in flavor. Marinating overnight does NOT always guarantee intense flavoring but this is a very good marinade.

I don’t like jalepenos, although I still love spice, so I grated the garlic and the ginger instead of just chopping it in the food processor. Also, I have made the cucumbers on their own several times because they are so good and refreshing!
