Dirty P’s Garlic-Ginger Chicken Thighs

Ingredients

  1. 2 pounds skin-on, boneless chicken thighs
  2. 1 cup thinly sliced red onion
  3. 2 tablespoons minced garlic
  4. 2 tablespoons minced peeled ginger
  5. 1/4 cup soy sauce
  6. 1/4 cup fresh tangerine or orange juice
  7. Freshly ground pepper
  8. Vegetable oil, for the grill

Instructions

  1. Combine the chicken, onion, garlic, ginger, soy sauce, juice and 1 teaspoon pepper in a large resealable plastic bag. Seal and shake to coat the chicken with the marinade. Refrigerate 1 hour or overnight. 
  2. Preheat a grill to medium high and oil the grate. Grill the chicken skin-side down until marked, 5 to 6 minutes. Flip and continue to grill until cooked through, about 5 more minutes. Let rest 5 minutes before serving.

Awesome! The flavor from the marinade was so good. I baked mine sheetpan style with veggies at 425 for 45 mns. The skin got burnished and crisp. Yum!

This was an excellent recipe! Used Boneless Skinless Thighs and it turned out great! Hated to waste the onions, so I heated a cast iron skillet on the grill and cooked them for ten minutes and they were so good with the chicken!!

This has been my favorite go-to summer chicken recipe!  My whole family loves!  I took it to salmon fishing camp one year and the whole camp raved!  I ALWAYS marinate over-night, and a few times I have left it for 2 over-nights and it was even better! My only change is I use bone-in skin on chicken thighs, but other than that, I don’t change a thing!  Would highly recommend this recipe!  Thanks Guy!!

I used boneless, skinless chicken breasts (because that’s what I always use) and marinated for 3 hours.  Great flavor.  The ginger was a real standout, but other members of my family thought the garlic was more pronounced.  Either way they were truly delicious and I will make these again.

Omg! This is off the charts! For whoever said there wasn’t enough flavor in this recipe is out of their mind! My 1st bite with skin included was freaking amazing!  You can taste the ginger an garlic combined flavor with a hint of sweetness thanks to the red onions! The Soy & OJ had the right amount of ingredients together to make for a incredibly don’t know how to describe taste…..not just on the skin but within every bite of meat! Super amazing and delicious my whole household loved it and went back for more & more! I marinated over night lil over 24 hour’s.  I used bone in thighs adjusted grilling time accordingly. A EXTRA 20-25 minute’s flippingand turningthe chicken where and when needed. I use a charcoal grill and made double recipe amount. Came out amazing!
