Ingredients
- 2 cups chopped rotisserie chicken, skin removed
- 1/2 cup diced celery
- 1/3 cup diced carrot
- 1/3 cup diced red onion
- 1/2 cup mayonnaise with olive oil
- 2 tablespoons yellow mustard
- 1 teaspoon celery salt
- 1 teaspoon granulated garlic
- Pinch of paprika
- Freshly ground pepper
- 6 whole-wheat sourdough rolls, split and toasted Lettuce and tomato, for topping
Instructions
- Combine the chicken, celery, carrot, red onion, mayonnaise, mustard, celery salt, granulated garlic, paprika and 1 teaspoon pepper in a bowl. Mix until combined.
- Serve the chicken salad on the toasted rolls with lettuce and tomato.

A simple, inoffensive chicken salad sandwich. For my senior (and failing) tastebuds a splash of the acidic (pickle, vinegar or lemon juice) helped tremendously.

Delicious, I added a bit of pickle juice and chopped pickles. No carrots or celery, added shredded lettuce.

I grated the carrots but left the rest the same( well added cayenne) but what can I say it was good, good, before the cayenne, and wonderful afterwards.
I modified mine with walnuts and apples, no carrots, because that’s what I had. Kind of a modified Waldorf salad with chicken on a bun. It was great! I’m happy.

This was okay. It is definitely a creative way to combine chicken, carrots, and celery into a cohesive salad, but it was not as tasty as I would have liked. Plus is that it’s very quick, easy, and healthy.
