Ingredients
- 2 teaspoons vegetable or olive oil, plus more for drizzling
- 4 slices Canadian bacon
- 2 pounds ground chicken breast
- 2 teaspoons sweet paprika, eyeball it in your palm
- 2 teaspoons poultry seasoning
- 2 teaspoons grill seasoning blend (recommended: Montreal Steak Seasoning) or salt and pepper
- 1 shallot, finely chopped
- 4 deli slices Swiss cheese
- 2/3 cup mayonnaise or reduced fat mayonnaise, eyeball it
- 3 rounded tablespoons Dijon mustard
- 2 tablespoons freshly chopped tarragon leaves, 4 sprigs
- 4 kaiser rolls or sandwich size sour dough English muffins, split and toasted
- 8 leaves leaf lettuce
- 1 vine ripe tomato, thinly sliced
Instructions
- Preheat grill pan, nonstick griddle, large nonstick skillet or table top electric grill to medium high heat.
- Add 2 tablespoons of oil and Canadian bacon. Warm bacon and caramelize it at edges, 1 to 2 minutes on each side. Remove to a piece of foil. Fold foil over loosely to keep warm.
- Combine chicken, paprika, poultry seasoning, grill seasoning, shallot. Score meat with the side of your hand to separate into 4 equal amounts. Make 4 large patties, 3/4 to 1 inch thick. Drizzle patties with oil and place on hot grill pan, griddle or in skillet. Cook 5 minutes on each side, until chicken is cooked through.
- Top patties with reserved cooked Canadian bacon and Swiss cheese. Fold each slice of cheese in half to fit the burger. Cover loosely with tin foil. Turn off pan and let cheese melt, 2 minutes.
- Combine mayonnaise, mustard, tarragon. Slather bun tops or English tops with sauce. Place Cordon Bleu burgers on bun bottoms and top with lettuce and tomato. Put bun or muffin tops in place. Serve with oven fries.

I bought these frozen chicken patties from Costco and was looking for different ways to use. These were a hit. FYI – There is no such thing as tin foil unless you are working in a scientific lab. A real pet peeve when people use this term.
Absolutely delicious! I subbed pepperoni for the bacon. Omitted the shallot and added spinach and dried garlic chips. I used mozzarella instead of Swiss. I will definitely make this again.
I made this tonight. I had to use turkey instead of chicken because the grocery store is hit and miss with ground chicken. We made the patties thinner and I made half the recipe since it is just my husband and I. I used a spicy grainy mustard, as that was what I had on hand. We thought the flavor was very good. This is a keeper for us.

VERY tasty–will definitely make again. I will make the burgers a bit thinner next time–one inch was too thick. The dijon dressing really brought this together.
Made these for dinner last night & they will definitely be going into heavy rotation for quick weeknight dinners. I used only 1 lb of ground chicken and got 3 really good sized burgers out of it. Used only half a tsp of poultry seasoning per others recommendations & added a half teaspoon of garlic powder to the mix. Still can’t believe how juicy and tasty these burgers really were!
These didn’t turn out as well as I’d hoped. Like another of RR chicken burger recipes, the meat didn’t come together enough to make actual burgers. In the end I had to take a mound of the chicken mixture and press it into a burger after putting it in the pan! Plus, my grill pan started to smoke really quickly and burnt the burgers, so I had to cut off the blackened parts. Maybe I’ll make them again with less meat, but not any time soon.
My fiancée and I love this dish! We both don’t like Canadian bacon nor do we like Swiss cheese so instead we use regular bacon and a mild cheese such as muenster. The patties are a little big so we make about 5. Keep the mayo spread, it’s great on sandwiches too!
We found this a bit bland for our taste. While the mayonnaise dressing was good, it needs something else, like a dash or two of Tabasco. The burgers were good, but I agree there was too much poultry season it. My family gives this 3 out of 5 stars.
Incredible flavor! You MUST make the mayonnaise otherwise, after you bite into it, you know you are missing something. I’d love to try this one on the grill instead of a skillet next time.
