Buffalo Chicken Sub

Ingredients

  1. 1 tablespoon vegetable oil
  2. 2 pounds boneless, skinless chicken thighs
  3. Salt and ground black pepper
  4. 1 tablespoon dark brown sugar
  5. 2 teaspoons paprika
  6. 1/4 teaspoon cayenne
  7. 1 cup your favorite wing sauce, such as Frank’s RedHot
  8. 2 tablespoons unsalted butter, optional
  9. 2 medium carrots, diced
  10. 2 celery ribs, diced
  11. 2 tomatoes, seeded and diced
  12. One 36-inch fresh French loaf
  13. 1 cup blue cheese crumbles
  14. Homemade Ranch Dressing, recipe follows
  15. 1 1/2 cups mayonnaise
  16. 1/2 cup buttermilk
  17. 1 teaspoon granulated garlic
  18. 1/2 teaspoon fresh dill, minced
  19. 1/2 teaspoon honey or agave syrup
  20. 1/3 teaspoon salt
  21. 1/4 teaspoon Dijon mustard
  22. 1/8 teaspoon ground black pepper

Instructions

  1. Preheat the oven to 425 degrees F. 
  2. Heat a 12-inch skillet over medium-high heat. Add the vegetable oil. Sprinkle both sides of the chicken with some salt and pepper, the brown sugar, paprika and cayenne. Sear both sides of the chicken in the skillet until golden, about 4 minutes. Add in the wing sauce, bring to a simmer and finish off in the oven until the chicken registers 165 degrees F on an instant-read thermometer, about 15 minutes. Let cool, and then pull the meat with your hands or two forks. Adjust the seasoning if necessary, add the butter if using, and place back in the oven at BROIL until crusty and caramelized on top, about 4 minutes. 
  3. In a bowl, the combine carrots, celery and tomatoes, and season with salt and pepper. Mix until combined. 
  4. Cut the French loaf horizontally. Place an even layer of blue cheese crumbles on the bottom, then the chicken and then the veggies. Serve with a side of Homemade Ranch Dressing.
  5. Mix the mayonnaise, buttermilk, garlic, dill, honey, salt, mustard and pepper in a bowl. Store in an airtight container.

This recipe is absolutely amazing! For the ranch I made the dressing from the show The Kitchen. This is a very easy recipe with barely any mess to clean up and I enjoyed it immensely saving leftover chicken to make myself a buffalo chicken salad the next day for lunch. Y’all got to try this one!

This chicken is a family favorite!  I have to admit we don’t make the sub; rather, we eat the chicken straight up.  I also substitute chicken breasts.  It’s excellent on pizza; along with mozzarella (or farmer’s) cheese, blue cheese crumbles.  Garnish with chives (or green onions) and celery leaves.

I’ve been using the ranch dressing as a basic in my repertoire and just served the ‘subs’ last evening for a company party.  I used the Costco, skinless, boneless thighs (2 lbs.) and for the last part of the recipe, I left them loosely covered in the oven, low and slow (2 hrs.)  The chicken was tender and moist.  I recommend asking your guests whether they like blue cheese, as some of mine did not.

My 22 y/o son made this with my assistance, and we made double the recipe of chicken, otherwise made everything the same and put it together the same. (PLEASE don’t leave out the Blue Cheese crumbles…. )
I FOOLISHLY “only” bought TWO 36 inch French Breads, which WASN’T ENOUGH, OMG that’s how delicious this was…..
