Ingredients
- 2 hearts romaine lettuce, chopped
- 1 cup shredded carrots, available in pouches
- 2 ribs celery with greens, chopped
- 1/2 cup ranch dressing
- 1/2 cup blue cheese crumbles
- 1 package, 3/4 to 1 pound, chicken tenders, cut into bite size pieces
- 1 tablespoon vegetable oil, 1 turn of the pan
- 2 tablespoons butter
- Salt and black pepper
- 1/4 cup hot sauce
Instructions
- Preheat a skillet over medium-high heat.
- Combine lettuce, carrots and celery in a salad bowl. Combine ranch dressing and blue cheese crumbles in a small bowl.
- Add oil and butter to hot pan with the chicken. Season with salt and pepper and sear for 2 or 3 minutes, then add hot sauce. Reduce heat a little and cook 5 minutes more.
- Toss salad with dressing and season with salt and pepper. Top salad with Buffalo chicken and serve.

Quick delicious dinner! I cheated and used my favorite pre-made buffalo sauce from the fridge but my husband who is suspicious of salads said to make this again soon!

Refreshing and nice spicy kick. Only change I made was to use light bleu cheese dressing instead of ranch. The original Buffalo wing recipe was bleu cheese all the way!

For a much more healthful version, I substitute the ranch dressing for a mashed avocado a mashed garlic clove and some lemon juice and white wine vinegar when making 1/2 the recipe. So I would double it for the whole recipe. I also used Franks and sprinkled cayenne pepper over the whole salad. Yumm!
I love this and so does my family. So simple. I usually use Frank’s Red Hot and that’s my favorite. Not to spicy for the kids. Best way is to use homeade buttermilk ranch. Ever since I saw it on 30 min Meals, years ago, this has been a staple for my meal planning 🙂
so good! used frank’s red hot sauce buffalo flavor and used maries greek yogurt ranch dressing instead bc it was way lower in calories than reg ranch and poured some extra buffalo sauce over the salad! so simple and what a hit if you love buffalo wings! healthy spin on it!
I love anything buffalo so maybe i’m biased but I thought this was a great recipe. the creaminess of the ranch, the sharpness of the blue cheese and the spicy buffalo kick created an excellent flavor combination. I think breaded chicken bites would be great in this recipe as well.
