Ingredients
- 12 skin-on chicken drumsticks
- Kosher salt and freshly ground pepper
- 2 cups apple juice
- 1/2 cup apple cider vinegar
- 1/4 cup low-sodium soy sauce
- 2 teaspoons honey
- Grated zest of 1 lemon
- 1/8 to 1/4 teaspoon red pepper flakes
- 2 teaspoons sesame seeds (optional)
- 1 tablespoon unsalted butter
Instructions
- Preheat the oven to 450 degrees F. Set a wire rack on a rimmed baking sheet. Put the drumsticks on the rack and season both sides generously with salt and pepper. Bake 30 minutes; flip the drumsticks and continue baking until golden and crisp, about 30 more minutes.
- Meanwhile, make the sauce: Bring the apple juice, vinegar, soy sauce, honey, lemon zest, red pepper flakes and a pinch of salt to a high simmer in a large skillet over medium-high heat. Cook until the sauce is syrupy and coats the back of a spoon, 20 to 25 minutes. Set aside until the chicken is done.
- Stir the sesame seeds into the sauce, if using, and warm over medium heat, if necessary. Transfer the chicken to a large bowl. Add the sauce and butter and toss to coat. Season with salt and pepper. Transfer the chicken to a platter and drizzle with any remaining sauce from the bowl.

My husband loves this, my only question is regarding the sauce.. do you stir occasionally? Not at all? I think it needs be added in there. Maybe that would make the difference in the sauce as I agree with everyone here it doesnt thicken much. Although the first time I think it thickened more so not sure what I did differently there.
Good recipe, except for sauce. Sauce did not thicken. I added a cornstarch slurry and all was well. The family liked this recipe and said I should make it again.

Very delicious!! If your sauce doesn’t thicken up in the allotted time just turn up the heat a little bit and keep cooking. That was my issue. Also add some more red pepper flakes if you want it spicy.
Sauce cooked as directed and didn’t thicken. Ended up just using barbecue sauce
I don’t know if it was the altitude or what here in dry ole Colorado, but I couldn’t get that sauce to thicken for the life of me. I finally had to to add some cornstarch to thicken it up. The consistency was great, but then if I had more time, I would’ve liked to have lightly broiled them to make them a bit more crispy with the sauce on the drumsticks. Great flavor, but a lot of work, and not a great result.
I hated the sauce, it was too acidic
Well, after reading other reviews I was quite surprised when – made exactly as directed – my sauce thickened up perfectly. Almost too much, in fact. I cooked it exactly according to the recipe. Baking the drumsticks on a wire rack at the prescribed time was perfect. Crispy and delicious. Will use this recipe again.
Worked like a charm. Cook the sauce on high. It thickens right up. My boyfriend and I went wild over this chicken. Crisped up beautifully in the oven. Definitely will make again. 5 stars!
Just made it Very Good, I did put a tablespoon of corn starch into the sauce perfect consistency. Thanks to reviewer #2 for the info.
