Ingredients
- 2 tablespoons vegetable oil
- 1 1/2 cups red onion, chopped
- 1 (4-ounce) can diced green chiles (recommended: Ortega)
- 1 (10-ounce) can diced tomatoes and green chiles (recommended: Ro’tel)
- 3 cups leftover cooked turkey, shredded
- 1 (16-ounce) jar chunky salsa (recommended: Pace)
- Salt and freshly ground black pepper
- 5 cups tortilla chips, crushed
- 1 1/2 cups shredded Mexican 4-cheese blend
- 1/4 cup cilantro leaves, chopped
- 1/4 cup sour cream
Instructions
- Preheat oven to 400 degrees F.
- Heat vegetable oil in a large oven-safe skillet, over medium-high heat. Add onions and saute until soft. Add green chiles, diced tomatoes, leftover turkey and salsa. Adjust seasoning with salt and pepper, to taste. Top with tortilla chips and then cheese. Place skillet in oven and bake for about 20 minutes.
- Remove from oven. Garnish with cilantro and serve immediately with side of sour cream.

Added 1/2 can drained black beans, cumin, and replaced tortilla chips with corn tortillas. Baked in an oil-sprayed 9×13 baking pan. Layered warm tortillas, chicken/salsa mixture, and cheese like a lasagna and served with Spanish rice.The diners raved.

Very good. We added some cilantro inside the dish besides the garnish. I will make this again for sure!
I used left over rotissiere chicken. I also did not have enough salsa, but it worked out fine. I did not have any green chiles. I added half a can of black beans and about 8 oz of corn. I also think it’s better with corn tortillas than tortilla chips. I did not have any cilantro or sour cream. I can see how it would be good with sour cream. I put it in a casserole dish and mixed the corn tortillas and some tortilla chips with the rest of the dish and topped it with the cheese. It turned out great! My husband and I loved it! So great that one of my friends that tried it wanted me to send her the recipe! This is definitely one of my new favorite recipes!! 🙂
Great for leftover turkey…I didn’t feel like I was even eating turkey for the 4th time in a week!! Definitely need the extra spices, I used cumin, chili powder, garlic salt, and white pepper along with the salt & pepper. Also recommend adding beans too. I used black beans. Both hubby and I really loved it. Will make again for sure!

This recipe was really good, and I just made a couple tweeks! I used rotisserie chicken, added a can of black beans (rinsed), and a taco-seasoning packet! You gotta do the sour cream at the end, as it really is the icing on the cake (so to speak)!! I did cook it in a casserole dish. This is also a VERY easy thing to make for a potluck dinner! YUM!!
