Ingredients
- 2 pounds haricots verts (French thin green beans)
- 2 large red onions, finely diced
- 8 tablespoons (1/2 cup or 1 stick) butter, unsalted
- 2 (10-ounce) cans cream of mushroom soup
- 3 tomatoes, seeded and diced
- 4 cans French-fried onions
- Salt and freshly ground black pepper
Instructions
- Blanch the haricots verts in hot water for about 3 to 5 minutes then remove from heat and shock in iced water. Drain and set aside to cool.
- Preheat oven to 325 degrees F.
- In a large skillet saute the chopped onion in butter. Then add the cooled beans and saute for a couple of minutes. Add the canned mushroom soup and mix well.
- Transfer to a buttered casserole dish and top with the diced tomato, French-fried onions, and season with salt and pepper, to taste. Bake in oven for about 10 minutes.

Blanching the beans made them tender. Mine were fresh from the garden and very firm. I loved the addition of the tomatoes. I’ll never make this dish again without the tomato. Great idea.
Love this easy basic green bean casserole recipe.
To this recipe I added 8 ozs (225 gr) of sliced or diced mushrooms + 1 diced red pepper and sautéed them with one onion for a few minutes.
And the mushroom soup, I added sour cream to thin it out & add flavour.
Turned out so yummy!
I make this at least 2-3 holidays a year. Always a family favorite!!

Great recipe, very tasty. My husband loved this. A bit time consuming to make, as there are a few steps making these. That being said, it was all well worth it when I tasted the end product. A great vegetarian option and leaning more towards the healthy side as well with the green beans. Definitely a keeper.

I love Robert and so followed the recipe exactly as written on first try. However, the only green beans that I could find were to large. It required extra cooking time and extra liquid (I added cream). I think it turned out well, my 12 year old told me that he doesn’t like green bean casserole and this was good. He also doesn’t like tomatoes! It just required a bit of tweaking on my part. I did add extra mushrooms and like that addition.
I’m looking for green bean casserole recipes and thought that Robert would have a good one, but I’m really disappointed to see that it includes canned mushroom soup instead of homemade.
I don’t normally like green bean casserole, just make it for my family. But this one, with the addition of the diced tomato’s was a winner. I made it for Thanksgiving and it was the hit of the meal, looking forward to making it again today.
