Beef and Cheddar Casserole

Ingredients

  1. 1 tablespoon extra-virgin olive oil, plus more for the baking dish
  2. Kosher salt
  3. 3 cups wide egg noodles (about 5 ounces)
  4. 1 1/2 cups sour cream
  5. 1/2 cup freshly grated Parmesan
  6. 12 ounces ground beef
  7. 1 red bell pepper, seeded and chopped
  8. 1 bunch scallions (white and green parts), finely chopped
  9. 1 tablespoon tomato paste
  10. 1 teaspoon Italian seasoning
  11. One 14 1/2-ounce can petite diced tomatoes
  12. 2 cups grated Cheddar

Instructions

  1. Preheat the oven to 425 degrees F. Oil a 2-quart baking dish.
  2. Bring a large pot of salted water to a boil. Add the noodles and cook to al dente according to the package directions. Drain and put in the prepared baking dish. Toss with the sour cream, Parmesan and 1/4 teaspoon salt.
  3. Meanwhile, heat the olive oil in a large skillet over medium-high heat. Add the ground beef and cook, stirring, until no longer pink, about 4 minutes. Add the bell peppers and scallions and cook until crisp-tender, about 3 minutes. Make a space in the pan, add the tomato paste and toast for a minute. Sprinkle with the Italian seasoning and 1/4 teaspoon salt. Add the diced tomatoes, stir and bring to a simmer. Cook until slightly thickened, about 2 minutes.
  4. Pour the beef mixture over the noodles and sprinkle with the grated Cheddar. Bake on the middle rack until the cheese is melted and the edges are bubbling, 15 to 20 minutes. Let stand for 10 minutes before serving.

This is very similar to something my mom made when I was growing up that we called Company Casserole so big bonus points for the comfort food factor. I did add some garlic to the sauce and will probably add some others seasonings as well next time I make it.

I made this tonight. After so many reviews saying it was bland, I added more salt and pepper to the beef, and added pepper to the noodles. Also added a dash of garlic powder and only used a cup of sour cream and 3/4 bag of cheese. It was good! I’d make it again but you need to adjust it to your taste.

I made this last night and honestly, most people are just nit picky and like to complain.
I think it came out great. I like my spices. But in an over-spiced society, of course its gonna seem bland. Use your own judgemental on how much spices you want to make it.
I had to change a couple things (i.e. get creative) because I didn’t have them….. used chopped onions n green bell peppers (in place of green onions and red peppers), both sautéed very well before adding meat.
We loved it! Its like like an easy lasagna. Oh and I used Rotel and some chopped leftover tomatoes.

This recipe was good but with some edits that made it really good! I have read many comments indicating this recipe was bland, spices will fix this, consult your pantry it is worth it.

I fixed it exactly like the recipe says. It was good but not great. I maybe would fix it again but add green bell pepper and more chives. It wasn’t as good as we were expecting it to be! Mediocre is a good word to describe it as it is in the recipe. It definitely needs a fresh element like a salad on the side and don’t sauté the peppers and onions much prior to baking. It was reminiscent of lasagna but lacked a lot of flavor and seasoning.

It was good. Basic ground beef casserole. It kinda tastes like a taco? Kids didn’t eat it. My husband and I thought it was fine.
