Ingredients
- 2 red bell peppers, seeded and coarsely chopped
- 2 teaspoons sugar
- 1 jalapeno pepper, seeded and chopped
- 2 slices white bread, crust removed and chopped
- 2 cloves garlic, crushed
- 1 cup tomato sauce
- 1 (28-ounce) can stewed diced tomatoes
- 1/2 cup water
- 2 tablespoons sherry vinegar or red wine vinegar
- 1/4 cup extra-virgin olive oil
- Coarse salt
- 1/2 red onion, finely chopped
- Blue corn tortilla chips
Instructions
- Place peppers in food processor and puree. Add sugar, jalapeno, bread, garlic, tomato sauce, tomatoes and process until smooth. Add 1/2 cup of water to thin soup, if necessary. Add vinegar and oil, pulse-process and season soup with salt, to taste.
- Serve immediately or chill. Garnish cups of soup with chopped red onion and pass blue corn chips for dipping into soup at table.

SO good and beyond easy! Made as written, it had too much sugar for my taste so I will reduce it in the future. But otherwise so flavorful, somehow light but filling, and great in the summer heat.

I whipped up this gazpacho right after watching the episode. I couldn’t believe how easy it was to make and it really hit the spot on a hot summer day. I’m difinately adding this recipe to my permanent collection. I can’t wait to share it with my family & friends. This recipe was easy to substitute some ingredients or just add what you have on hand. I used some cucumber and carrot in addition to all the other ingredients. Awesome!
This came close to a soup I had in Spain. It was relatively easy and very impressive for guests. Did feel like it needed a little more flavor.
I have learned to always make this a day ahead to let the flavors meld and to make a double batch because it goes that fast. Excellent easy recipe
Trust me, an avowed carnivore for years and f-i-n-a-l-l-y, a cook in the form of Rachel Ray appeared on television with what looked like an intriguing recipe for red pepper gazpacho. Phenomenal! Now, am branching out and enjoying other vegetarian dishes that more than add life to what was once a very predictable schedule of cousine. Thank you Rachel!

THIS WAS GREAT WITH THE MEAL AND WE ARE STILL EATING ON IT WITH TORTILLA CHIPS AS A SNACK. I ADDED FRESH CILANTRO TO MY RECIPE AND IT WAS SO YUMMY.
