Ingredients
- 1 (1/4-ounce) package active dry yeast
- 1/2 cup warm water (105 to 110 degrees)
- 2 cups buttermilk
- 3 tablespoons peanut oil
- 2 tablespoons sugar
- 2 cups whole-wheat pastry flour
- 1/2 cup rolled oats
- 4 large egg whites
- 1/8 teaspoon baking soda
- 1/4 teaspoon fine salt
- Cooking spray for waffle iron
- Maple syrup, for serving
Instructions
- 1. Sprinkle the yeast over the water in a large mixing bowl; let stand until foamy, about 5 minutes. Add the buttermilk, oil, sugar and flour and whisk until smooth. Cover the bowl with plastic wrap and refrigerate overnight.
- 2. Preheat a waffle iron. Whisk the oats, egg whites, baking soda, and salt into the waffle batter until smooth. Lightly mist the hot waffle iron with cooking spray. Add about 1/3 cup of batter to each section, using the back of a spoon to spread batter to the edges. Cook until the waffles are crisp and golden brown, 5 to 7 minutes. Repeat with the remaining batter. Serve with maple syrup.

We loved these! They freeze well. I am diabetic and they are great with just a spread of peanut butter.
I was so excited to try this recipe. I have been making my family waffles in the same non-stick iron for 14 years and have never had a batter stick like this one. I even buttered the pan to death. Had to throw away the iron because it absolutely would not come off. I made the remaining batter like pancakes on my cast iron griddle and they still stuck. The taste didn’t matter after I lost my iron and fought with it for an hour.
I love most any waffles but these are kind of flat tasting for all the work. I think the whole whear makes them kkind of heavy also. I will try one more time and add some sugar and vanilla or maybe cinnamon.

My daughter and I made these and we loved them. These waffles have a great texture and are not overly sweet although I did add a tsp of vanilla. I will add 2 next time.

My family, including my very picky 12 year old, likes this recipe. The whole wheat pastry flour is not whole wheat tasting. I”d suggest for those who did not like the taste to add 1/4 C brown sugar. But I”d prefer to not add more sugar in our diets, as it was fine the way it is!
