Ingredients

  1. 1 3/4 cups all-purpose flour
  2. 1 3/4 teaspoons baking powder
  3. 1/8 teaspoon fine salt
  4. 1/8 teaspoon ground nutmeg
  5. 1 1/2 cups milk, at room temperature
  6. 2 large eggs, at room temperature, separated
  7. 1/2 teaspoon vanilla extract
  8. 1/4 cup unsalted butter, melted, plus more for brushing the iron
  9. 1 large egg white, at room temperature
  10. 1/4 cup sugar
  11. Serving suggestions: Maple syrup, jam, fresh fruit, or yogurt

Instructions

  1. Preheat a waffle iron to medium-high. 
  2. In a large bowl, whisk together the flour, baking powder, salt, and nutmeg. 
  3. In a medium bowl, whisk together the milk, egg yolks, vanilla, and 1/4 cup melted butter. Whisk the milk mixture into the flour mixture until a batter is formed. Take care not to over mix the batter. In medium bowl, with a hand-held electric mixer or whisk, whip the 3 egg whites until they just begin to hold a loose peak. Scatter the sugar over the whites and continue beating until they hold a soft peak. Using a rubber spatula, fold a third of the egg whites into the batter to lighten the base. Fold in the remaining whites. 
  4. Brush the inside surface of the iron with butter. Pour in enough batter to lightly cover the surface of the iron, about 1/3 to 3/4 cup, depending upon the size of the iron. (Take into consideration that the batter will spread once the lid is closed.) Cover and cook until golden brown and slightly crisp, about 5 minutes. Repeat with the remaining batter. (If the waffle iron is well seasoned or nonstick it is not necessary to brush the inner surface each time before cooking the waffles.) 
  5. Serve the waffles immediately with syrup, jam, fresh fruit, or yogurt.

Fluffy and crispy on the outside…yummy! Made this with my 5 year and it was a hit. Eggs part of instruction was a tiny bit confusing but no big deal.

I really enjoyed this recipe very much. The flavor was wonderful. The waffles were light and the egg flavor came through well. The reason I gave this only 4 stars is because of the unclear instructions. The eggs are specifically separated on the list of ingredients. Instructions state separate the eggs and instructions are given to whip the 3 egg whites but it is not clear whether or not to use 2 or 3 egg yolks in the batter. I used all three egg yolks and was very happy with the waffle.

These were fine, but there are other recipes on this site that are tastier. The batter didn’t really rise in the iron for me causing the waffles to not cook evenly. This also made for a denser waffle. Maybe I did something wrong, but even the flavor wasn’t anything special.

This is the best Waffle Recipe I have ever made. The waffles are light and fluffy, An the hint of nutmeg in them is so good. An I’m not a nutmeg person. But this is the only waffle recipe I use to make homemade waffles.

they really great!! sooo much better then the waffle mix I usually use!!! hahahaha, any way they were wonderful only they only seemed to make 3 instead of 6 so if I made it again I would double it thats all.

Lovely! A little time consuming, but definitely worth it. You should expect a little labor if you are going to make waffles from scratch! The egg whites definitely added a lot to the light and fluffy consistency. Will definitely make this again.
