Strawberry Scones

Ingredients

  1. 4 cups plus 1 tablespoon all-purpose flour
  2. 2 tablespoons sugar, plus additional for sprinkling
  3. 2 tablespoons baking powder
  4. 2 teaspoons salt
  5. 3/4 pound cold unsalted butter, diced
  6. 4 extra-large eggs, lightly beaten
  7. 1 cup cold heavy cream
  8. 3/4 cup small-diced dried strawberries
  9. 1 egg beaten with 2 tablespoons water or milk, for egg wash

Instructions

  1. Preheat the oven to 400 degrees F.
  2. In the bowl of an electric mixer fitted with a paddle attachment, combine 4 cups of flour, 2 tablespoons sugar, baking powder, and salt. Blend in the cold butter at the lowest speed and mix until the butter is in pea-sized pieces. Combine the eggs and heavy cream and quickly add them to the flour and butter mixture. Combine until just blended. Toss the strawberries with 1 tablespoon of flour, add them to the dough, and mix quickly. The dough may be a bit sticky.
  3. Dump the dough out onto a well-floured surface and be sure it is well combined. Flour your hands and a rolling pin and roll the dough 3/4-inch thick. You should see lumps of butter in the dough. Cut into squares with a 4-inch plain or fluted cutter, and then cut them in half diagonally to make triangles. Place on a baking sheet lined with parchment paper.
  4. Brush the tops with egg wash. Sprinkle with sugar and bake for 20 to 25 minutes, until the outsides are crisp and the insides are fully baked.

ohmygosh…I am not English but in my experience these are a perfect example of the classic! I followed the recipe exactly but used my ninja food processor to combine the flour/butter and added pecans to the dough along with the dried strawberries. Dough was easy to handle and I cut them into smaller triangles. The only thing I might do next time is add a little more sugar in the dough. Another great Ina recipe.

I have made this recipe many times. For me, finding dried strawberries is difficult so I usually use dried cherries or cranberries. The scones always turn out flakey and buttery. Not too sweet which I like. After baking a batch I freeze them so I can enjoy them over time. If the recipe is followed to the letter it will be a success.

I was thoroughly disappointed. These tasted like pancakes before the syrup or honey are added! In other words, pretty tasteless, and not sweet enough. The looked like scones should look on the outside, although the inside wasn’t cooked through even after 27 minutes. More like a biscuit than a scone inside. I read other reviews and my baking powder is maybe too old. However, I not be using this recipe again, and I always love Ina’s recipes. Too much wrong with it.

I have made your recipes for years, and feel nothing is to too hard to make. However, I made your strawberry s ones, but used fresh blackberries.(off my bush) it’s only me. (I’m a 67 spinster) question, I only cut nine biscuits and put the remaining dough in freezer. Is this okay, to freeze scone dough?

B. So sticky! I followed directions, floured my counter. Rolling impossible. Made ‘em one at a time like a hamburger. Contessa didn’t even get her hands dirty! Where am I going wrong?

i made these not realizing it called for dried strawberries….i used the fresh strawberries that i had at they turned out great…first time making scones and i’ll use this recipe again.
