Ingredients
- 3 cups old-fashioned oats
- 2 cups unsweetened coconut chips
- 1 cup chopped dried apricots (6 ounces)
- 1/2 cup coarsely chopped raw pecans
- 1/4 cup brown sugar
- 3 tablespoons canola oil
- 3 tablespoons real maple syrup
- 1 teaspoon pure vanilla extract
- Kosher salt
- Quick-Fix Honey Yogurt, recipe follows
- Fresh blueberries, for serving
- Sliced fresh strawberries, for serving
- 2 cups plain Greek yogurt
- 3 tablespoons honey
- 1/4 teaspoon ground cinnamon
Instructions
- Arrange the racks in the center of the oven and preheat the oven to 325 degrees F.
- Toss the oats, coconut chips, apricots and pecans in a large bowl. Whisk together the brown sugar, canola oil, maple syrup, vanilla, and 1/4 teaspoon salt in a second bowl and drizzle over the oat mixture. Stir well so everything is evenly coated. Use your hands to toss and make sure every piece of oat is covered.
- Spread the mixture in an even layer on a rimmed baking sheet. Bake until golden and brown, 15 minutes, rotating the baking sheet tray halfway through baking and stirring the granola with a spoon so it will cook evenly. Remove from the oven and add to a large bowl so it will stop cooking. Let cool before serving.
- Serve over a bowl of Quick Fix Honey Yogurt and top with berries.
- Combine the yogurt, honey, and cinnamon in a bowl.

Very delicious and healthy. I added peanut butter, cranberries raisins, chia seeds and dark chocolate chips and coconut oil and placed it in the oven for 15 minutes on low heat.

Have used this with variations many times. Like it because the liquids can be mixed with sugar and I microwave them to dissolve the sugar before pouring it on the oats. I use golden raisins after baking and do not use apricots as they are hard to buy chopped. Sometimes use cranberries and sunflower seeds. You can vary to your preferences. I only bake the oats and coconut as my nuts are usually already roasted.

My daughter and I made this just the other day & it’s delicious! I changed a few of the ingredients…I used olive oil, honey, walnuts & raisins, overall we love it w/the yogurt recipe, as cereal or a simple snack. So easy, definitely will be making this again…thank you Neely family!
Yum. We ate with yogurt, ice cream and oatmeal. The kids love it as a snack too. Definitely a keeper. I used honey instead of maple syrup. Super easy, fast and quick and GOOD!
Yum, love the vanilla addition. Just used plain oats, chopped up almonds and went light on the brown sugar, oil and syrup. Like making granola in 20 minutes as opposed to Altons 1.5 hours in the oven…

Love this recipe! It’s soooo easy to make and my kids love it! I did try something different and alternated honey for the maple syrup and it took the flavors to a whole new level!!
