Ingredients

  1. 3 cups all-purpose flour
  2. 4 teaspoons baking powder
  3. 2 teaspoons ground cinnamon
  4. 2 teaspoons ground ginger
  5. 1/2 teaspoon freshly grated nutmeg, eyeball it
  6. 1/2 teaspoon salt
  7. 4 large eggs
  8. 2/3 cup packed dark brown sugar
  9. 1 cup canned pumpkin puree
  10. 1 1/4 cups milk
  11. 1/2 cup molasses
  12. 1/2 cup (1 stick) melted butter, plus some to butter the iron
  13. Syrup, whipped cream or fresh fruits for topping, to pass at table

Instructions

  1. Preheat waffle iron. 
  2. In a large bowl combine flour, baking powder, cinnamon, ginger, nutmeg and salt. In a medium bowl, beat eggs and brown sugar until fluffy, then beat in pumpkin, milk, molasses and melted butter. Stir the wet into dry until just moist. Do not overstir the waffle batter. Brush the iron with a little melted butter and cook 4 waffles, 4 sections each. Serve with toppings of choice.

This recipe is a 5 as written. I’ve made it many times. However, I am now on a no dairy, no gluten, no sugar, no alcohol order from my doctor. I have a picky teenager, but I modified it, and he said it was DELICIOUS and couldn’t tell I modified it.

Substitutions made:
3 cups gluten free flour for all purpose flour
1/2 cup apple sauce for butter
1/3 cup coconut palm sugar and 1/3 cup honey for brown sugar for brown sugar
cut milk to 1 cup unsweetened almond milk (because I worried it may be thin))

I often toss the rest of the pumpkin or find the leftovers in my freezer months later. I took the extra pumpkin and added cinnamon, maple syrup and honey and heated it together on the stove in a pan. I put it on top of my waffles. I am also putting a spoonful of it in my coffee. Delicious.. but I LOVE pumpkin.

These are wonderful! Even the batter is yum 🙂 I must have a small iron, as I got 8 waffles out of my batch. Even better! I froze the extra to be warmed in the toaster for later. This is a keeper.
