Banana Muffins

Ingredients

  1. 2 1/2 cups unbleached all-purpose flour
  2. 1/2 teaspoon baking soda
  3. 3/4 cup dark brown sugar
  4. 1/4 teaspoon ground cinnamon
  5. 2 cups smashed bananas (about 4 to 6 bananas)
  6. 1/2 cup vegetable oil
  7. 1/2 cup milk
  8. 2 large eggs, at room temperature
  9. 1/8 teaspoon fine salt
  10. 1/2 teaspoon pure vanilla extract
  11. 3/4 cups chopped walnuts

Instructions

  1. Preheat the oven to 425 degrees F. Lightly brush a 12-muffin tin with butter and set aside.
  2. Whisk the flour, baking soda, brown sugar, and cinnamon together in a medium bowl; set aside.
  3. Whisk the banana, oil, milk, eggs, salt, and vanilla in a large measuring cup with a spout or another bowl.
  4. Make a small well in the center of the dry ingredients. Pour wet ingredients into the center; then stir with a wooden spoon until the dry ingredients are moistened but still lumpy. Do not overmix the batter or your muffins will come out dense. Gently stir in the nuts. Divide the batter evenly into the muffin tin.
  5. Put the muffins in the oven and immediately reduce oven temperature to 375 degrees F. Bake until golden brown, about 25 minutes, rotating the pan halfway through the cooking. (Insert a toothpick into the center of a muffin to check if it is done. Toothpick should come out clean). Cool muffins in the pan on a rack for a couple minutes. Turn the muffins out of the pan and cool on the rack. Serve warm or at room temperature.

These turned out perfect! I added a tsp of baking powder after reading reviews, Ty. I did not use nuts but added 1/3 cup peanut butter and a half cup mini chocolate chips. Husband and children approved ☺️

Delicious and moist! I was careful not to over mix as the recipe instructed and turned the pan halfway in baking process. They were perfect! I never feel banana breads are sweet enough so I added a sprinkle of sugar over the bananas before I mashed them. I also increased the cinnamon to a tsp. Will definitely make again.

How the do you do step six? I don’t have a setting on my oven for that, I looked in the owners manual but the section about copyright wasn’t helpful

I made these muffins, using 4 bananas, and did everything as asked. When they came out, they were dense, bland, and quite unsatisfying. Will not make again.

I really like these muffins! I made a few adjustments, used 1 tsp cinnamon, 1/4 tsp nutmeg, and 1/2 tsp baking powder. Nice and airy, will def make again.
