Onion and Garlic Bread

Ingredients

  1. 1 tablespoon butter
  2. 1 medium onion, yellow skinned, chopped
  3. 3 cloves garlic, crushed
  4. 1 teaspoon sugar
  5. 1/2 teaspoon ground thyme, poultry seasoning may be substituted
  6. A few grinds black pepper
  7. 1 (12-inch) loaf crusty bread, split lengthwise
  8. 2 handfuls grated Parmigiano

Instructions

  1. Melt butter in a small pan over moderate heat. Add onions and garlic and season with sugar, thyme and pepper. Cook 15 minutes, stirring occasionally, until onions are golden in color and translucent.
  2. Place the split bread on a baking sheet and broil until golden. Spread half the onions and garlic on each half of bread in a thin layer. Sprinkle each side of loaf with a handful of cheese and return to broiler for 30 seconds to bubble cheese. Serve with a hearty, soup-er supper

This was fabulous.  I made as directed for one half of the loaf. and added provolone slices to the other half, and both ways this bread was simply fabulous.  I served it with Rachael’s pasta y fagioli.  Yum!!!

This was a tad bit too onion-ey, and next time I will cut the amount by about a 1/3. This was a great low fat substitution for the usual fat laden garlic bread.

The onion topping on this bread is delicious! When I make it again, I will use thin sliced french bread though, because although I purchased a freshly baked loaf of crusty bread, it was just too much crust.

I made this recipe and found it to be way too sweet for us. The carmelized onions plus the roasted garlic made this savory side dish too sweet. Also, there was no recommendation to chop up the thyme and as it was it created little hard to chew bits of thyme that would have been better if finer. The recipe was easy enough, but a bit too time consuming for what it is…a side of garlic bread. I would not make this again.

I love Rachael Ray but this bread is out of this world. My whole family loves this recipe even my 2 year old. Even someone who does not like onions would love this bread. My only complaint is I have to double the recipe to cover both halves of bread!

This bread is so good! If you are on a low carb diet…beware….it is addictive and well worth the extra carbs! Yummmmm!
